Recipe for making Afghani basmati rice pilaf:
Ingredients:
- 2 kg Basmati rice
- 3 kg beef meat (loin)
- 2 kg orange carrots
- 750 ml vegetable oil
- 3 onions
- Salt
- Zira
- Turmeric
- Unground black pepper
- Raisins (200 g)
Step-by-step cooking process:
1. Prepare the ingredients: cut the meat into small pieces, carrots into large slices, onions into half rings.
2. Heat vegetable oil in a large saucepan. Fry the onion until golden brown.
3. Add meat and fry until golden brown.
4. Add the carrots and continue to cook until the carrots are soft.
5. Salt to taste, add cumin, turmeric and black pepper.
6. Add raisins and continue cooking for some time.
7. Rinse the rice and add it to the pan, stir with the remaining ingredients.
8. Add hot water so that it covers the rice by 2-3 centimeters.
9. Cover the pan with a lid and cook over medium heat until the rice is cooked.
10. Serve the pilaf hot, sprinkled with herbs on top if desired.
