There's an ender dragon mechanic which is, you can lure the dragon through the end gateways, or maybe get a bit technical and use some explosives or redstone to do it, and after the dragon is gone, you can respawn another one and kill it to get a new portal. After that, you can unload the outer end chunks, and the dragon will fly back to the main island, and you can then trap it as you like! And you still have a portal!

Well technically theres something you could do to keep a dragon there permanently. If the dragon flies through a gateway to unloaded chunks a new one will spawn. Then you could kill that one to reopen the portal without blowing up all the cristals, go through the gateway to load the chunksand when the first dragon is back on the island break the last cristals
