I was using Star San for a long time, but as my batches and the frequency of making them increased, it actually started being too expensive for me, especially given I mostly make meads, and honey itself isn't cheap. For example: a 236ml container of Star San costs 22 euros where I'm at. That's about 25 bucks and in the beginning, that quantity would last me a year and a half easy. However, eventually...I started burning through those Star San bottles in less than a year. Now, I'm not saying that's objectively expensive, not affordable or anything like that, but compared to the old winemakers' alternative, it's ridiculously expensive. That alternative would be using potassium metabisulfite as a sanitizer. It's still used in professional wineries, either sodium or potassium metabisulfite. That stuff is dirt cheap. 50g needed to make a 2.5% sanitizing solution by mixing it with a gallon of water, costs less than a euro. It's 75 cents or about 1 US dollar, and that's reusable...it can last for 2 - 3 months easy. It's also non rinse. Anyhow, if I need to spend less than a euro about 5 times a year, or more likely if I buy the entire year worth at once, that's 3.75€ for a year supply. Now compared to 22€ for a Star San container which at this point doesn't even last me a year...the choice is clear for me. You can call me frugal, and hey...I am a dane after all, but it's more a matter of principle. 22€ for about 10 months, or 3.75€ for an entire year supply. That's 18.25€ less. Additionally, Star San can only be ordered online or bought at a few brew shops specifically, whereas the potassium or sodium metabisulfite is widely available not only in specific brew shops, but any winemaking supply store and beyond. Anyhow, hopefully this additional information on one more super easy and affordable method, helps someone.

Sanitize setting on your dishwasher. By far easiest method and yiu can do quite a gew bottles.

Perfect! I need this type of information! I have limited budget. I live wine and I am backing making wine now retired and divorced, I need to save as much money as possible. 30 wine bottles from a kit that cost me $49.99 costs me about $1.66 per 750 be ml bottle as opposed to $7.44 for a winery made bottle! what can you tell us about using Potassium Metabisulfite as a no-rinse sanitizer? some of us dont have access to starsan 😢

Starsan is more for your beer based brews as it doesn't contain the extra preservatives to keep its shelf life like Kmeta does The good thing about Kmeta is the fumes sanitise as well whereas with starsan the mix needs to make contact with the whole bottle it doesn't work as an "airborne" like Kmeta will, making the whole sanitisation process cheaper overall and easier with less cleanup afterwards✌️

Is there a rule of thumb of glass bottles that you can use? For example if I have glass soda, juice or water bottles would that work? Are there markings on bottles I would look for or a certain thickness of glass?

Sorry, I will only recommend what I have personally used. 750ml wine bottles. Mostly recycled ones.

Bottle it into any glass bottles you want to just make sure you sanitize them first but also make sure your wine is done depending on how you seal the bottles don't want any to explode

I use a German spirit called Korn. It's basically the same as vodka, and it works a treat. I put it in a spray bottle and spray everything.

I cannot advise using antibacterial soap over the more standard ways of sanitizing your winemaking equipment. Why take a chance!

The bleach steps - I’m wondering about contamination of the bottles again by rinsing with tap water? After soaking the bottles in the bleach, I was under the impression that rinsing with distilled water would maintain sterility given that hot tap water is no guarantee of sterilization.

"While sanitizing reduces microorganisms to a safe level, sterilizing removes all microorganisms from an item." A level of sanitization is all that is required.
