I’m so thankful that I found your page. My new hobby is wine making, and I have been doing it since the pandemic. I have made a red wine, white wine, pear apple wine, raisin wine, and honey apple wine. I’m currently making a red wine that I will be using bourbon chips in, and this video was very informative.

I sterilise my oak chips by wrapping in foil and in the oven at 100 centigrade for 20-30 minutes. I also sterilise my wine bottles in the oven. I use a UVC light to sterilise other equipment too. I don’t use chemicals.

You can also use a Tea Infuser tube for oak chips. Rather than a bag, and a tube is reuseable.

Very informative so many thanks for your easily understood video. One question I have is regarding the sterilisation of the oak chips. It is widely published to sterilise in boiling water. Although personally I also have doubts in this method due to boiling away the aromatics tannins etc from the oak. Do you think though for those who do boil they should include the boiled liqueur into the racked wine? So as to include any products flavours etc that came out from the oak. Personally though I prefer to sterilise using the oven at 110 deg C for 15 minutes.

If you have no plans to back sweeten and your absolutely sure that fermentation is complete, then you will "probably" be okay.

Could you use a diluted solution of star san to soak the chips and sanitize them as opposed to alcohol?

@@DIYFermentation that was brutally great to hear. Being straightforward really relieved my worry because this isn't an exact science. A Virginia vineyard enthusiast once said " the guy 3 miles away might grow the same wine and it come out completely unexpected. . So far the Oak taste good, but the wine feels more watered down. I might leave the Oak out of my blueberry wine from here on. But it definitely works great with Black seedless grapes . Thanks for being real with me .

Why would you add oak to your primary that will only last about a week. The oak character in wine gets developed over time.

I would say yes. As I do this. There is no need to be in a rush to the first rack. I have some brews sitting in primary for 6 weeks. Also, when you do rack and you wash the bottle out you can always use a strainer to capture the chips and after a quick rinse, toss them back into your brew while in secondary.

Because I'm using 4 liter jugs, the opening is a bit narrow. Removing the chips might be a little bit of a problem. I've got to make some kind of hook to help remove the larger pieces.
