One thing that annoyed me with the anime fight with Sanji vs Queen compared to the manga is that they made Sanji seems like he struggles more to defeat Queen in the anime. In the manga once Sanji started doing his combo attacks the fight was over compared to the anime, they made Sanji stop the combo part way and made Queen get back up before the final attack. They also made it look like Sanji was having a beam struggle for kicking queen off the island with his final attack in the anime while in the manga once the kick landed, Queen was IMMEDIATELY sent flying. Sanji also kicked him Higher and Further away from the island compared in the anime.

I think you're failing to account for 2 things. 1. Katakuri is bare minimum jack level which scales him past all tobi roppo immediately so he isn't weak. Only 3 straw hats stand a chance and 2 will become strongest of all time. 2. If oda reintroduced katakuri, he'd prob give him acoc as a sign that he kept on training after luffy showed him that undying will. It would be like Lucci but prob stronger as imagine if he brought Lucci back in at his enies lobby strength. He'd be defeated by chopper with ease, but oda kept his threat level without making him a luffy only fight.

The "perceiving Marco" point is probably the second most ridiculous point after the hit count argument. That's how you can tell who lacks fighting experience and basic common sense. Marco was never at leisure to even try perception blitzing Queen, he was handling two people at once. He flies thanks to a bird DF. Birds don't fly like Sanji moves in the air, they follow more or less continuous paths. A giant bright blue phenix flying in continuous paths is gonna be easier to perceive than a guy who can kick the air and make random directional changes at very high speed. Especially if said bird keeps getting intercepted by a second fighter. It's really absurd, to assume that just because back in Marine Ford, he managed to intercept an attack from Kizaru, and make him block a kick, that every single person who can keep track of him in any situation, has great perception skills.

Lot of people downplaying Queen. Sanji is one of the strongest fighters in the verse, the only thing he's lacking is AP, stamina (he can't spam ifrit jambe yet), and maybe endurance. The Katakuri that fought Luffy in whole cake literally gets one shot zero diff by current Sanji. The difference in power levels from whole cake to end of Wano is insane. I do believe if Katakuri comes back, he will be powered up to match the other characters though, like how Crocodile was able to fight Doflamingo, or like how Lucci can fight Zoro now, but comparing previous opponents to opponents from new arcs is dumb, the new opponents are always stronger, and the old opponents usually get powered up if they come back.

I would argue that some people are just naturally durable. Katakuri isn't. If you need haki to not spit out blood from a punch from someone weaker than you, then your armament haki has to do a lot to make up for that.

One thing they always fail to consider is the passing of time. The protagonists as well as any character that gets enough attention in the story generally keep improving, but older characters that help push the plot along tend to stagnate and see little improvement through the story. While there may be a few exceptions, most stories do this especially shonen series. Katakuri is a victim of this, his abilities are fairly good for the point of the story where he is introduced but falls off a fair bit once the next arc comes in and in the case of the Wano arc, falls off rather substantially once the team gets a full suite of improvements. Since these comparisons generally come down to feats, it is natural that characters introduced later in the hero's journey will be tougher opponents and in this case Queen absolutely outscales Katakuri, and by association so does Sanji.
