Kinda depends on how much you eat. Technically it contains 6 servings of vital wheat gluten which is almost pure protein so it fills you up a whole lot! You'd be surprised.

You do a great job, Sarah! As for beet root, I use fresh grated in my burgers. Not sure if that will help you. I also make my own beet root powder and I wonder if that dyes better than store-bought. Hey thank you! It's kind of complicated, because I haven't actually done anything with it in months. I used a super dark brown Shea Moisture hair dye and it's just faded a lot from shampooing and my hair underneath was bleached.

great that you're using a cheesecloth to steam the seitan, instead of aluminum foil!! :) i only ever make seitan sausages, but i always make sure to use grated apple or applesauce (not even that small of an amount) in my mixes to keep them moist. i find it helps with reducing the fat content and is just more effective in regards to retaining moisture. with the ham it might be worth giving some pureed pinapple a try?

That is SUCH a good idea! You know, I was thinking about adding some of the pineapple because my first test of the recipe was so firm (I didn't use oil that round). But I wasn't sure if it would just make it mushy! But thank you so much for sharing that tip... I will have to try it ASAP.

Unfortunately I don't think there's anything you can substitute 1:1 for vital wheat gluten in this recipe. However, I did a quick search and found this tofu version of ham you could try out: www.isachandra.com/2016/12/sweet-smoky-glazed-tofu-ham/

i wanted to know what differences in taste/texture do you notice between steaming and boiling the seitan? i have never heard of steaming it before, every argentinean recipe boils it so i'm curious! thanksss

It's mostly a textural difference. The seitan absorbs more liquid when boiled. When you steam it in foil or cheesecloth it stays super firm, so you could slice it thinly for sandwiches and such.

I have seen recipes that grind up bacos (fake -and vegan- bacon bits) for more of a ham-like taste. There is also vegan s(ham) boullion on the market.

Looks so yum!! Question about seitan...I made some seitan chunks yesterday by boiling the dough in broth, but the pieces came out soggy and spongy, like they'd soaked up the broth. Any idea what I can fix for next time?

Seitan just absorbs a lot of water when you boil it! That's why I prefer to steam or bake it in foil/cheesecloth. But if you want to boil it, I would recommend a gentle simmer because a rolling boil just seems to make it super soggy.
