You could spread the tofu mixture out on to piece of foil lined with parchment , stuffing on one side (the long side leaving one inch border) then roll up like a Christmas cracker, bake and glaze ❤️✨

Nice job Caitlin! It looks delicious. I tried to make a tofu loaf last year as well and was very impressed that I could do it. It wasn't that hard, but definitely took up a lot of my Thanksgiving cooking time. Plus, my daughter still really wanted a Tofurkey roast, so we had that too. I like the homemade ones way better and they don't have to be glutenous, so hurray for GF holiday loaves :)

You can make tofu from other beans, such as chickpeas(look up burmese tofu). The texture is more gelatinous and a little different from tofu, but it might work out.

You could use any baste. I enjoy 2 tbsp of soy sauce, 2 tbsp oil, 1/2 tsp sage, and 1/2 tsp thyme.

I bet that would be just fine. I don’t know for sure but I think that any type of fake meat boullion paste/powder would create a similar taste. Using “beef” stock powder might have a different flavour than “chicken” stock powder though

When I go to bake my thanksgiving baked goods. I think the flax egg is the culprit of my brick like density. Do you think it could be anything else? I know about the vinegar trick. Your food always comes out perfect and I’m not talking for pictures like the texture and well reacted ingredients. Lol

Flax is tricky! Sometimes I think it can weigh baked goods down, but other times it's essential to avoid a crumbly texture. When I do use a flax egg in my recipes, I also use the baking soda + acid trick - when you combine them together they react to form bubbles, which helps the baked goods rise more in the oven. Baking powder does something similar, but i think that combo gives it a little extra boost so i like to use both.

You could lightly spray with oil (it won’t get as brown) or brush a little soy sauce on top! It won’t be as shiny because it doesn’t have natural sugar like balsamic but it will still brown more 😊

Hi Joyce! I actually froze some of this and it held up well - I would recommend spraying it with a bit of nonstick cooking spray when reheating though, otherwise it was a tad dry. You could cut this in half, but would need to find a smaller loaf pan and I'm not sure those exist!

So a dumb question maybe, but you could theoretically cut the tofu into smaller pieces to get even more liquid out, right? Is dryer better, or should. We be shooting to leave some moisture in there?
