The dead cat or wind muff as you call it, it’s not difficult to put on. You typically take the foam cover off and then you put the dead cat on. I have done this with mine and it works great. Personally, I have tried the majority of the Saramonic microphones of this style for on camera recording and this one is by far the better.

The high frequency boost option is what you would use when you are in a room that maybe has air conditioner or some other low level frequency noise that the microphone will pick up. You would turn this on and it would help remove / not be as sensitive to some of that background noise or at least not pick it up as much.

Vmic5 Pro sounds better, but I think I would not bye this mic. Its to bulky like you said and to mount the deadcat is too difficult. But it depends on for what you will use it. For an overhead studio mic its not bad.
