Very recently, I had sarson da saag and makki ki roti...and I just loved it...the one I tried had whole fried garlic cloves that accentuated the flavour... Thanks Bong eats for uploading this recipe for us...and as usual Rahul Sir's explanation keeps us engrossed with the content ..

My son in law searches the farmers markets here in America to find just the right mustard greens. Now I understand what he means! Of course our varieties are different but it’s the stages of development of the plant that really critical to the flavor of the dish. Most Americans do not prefer bitter greens. In our culture, those were relegated to slaves or tenant farmers, so there was a stigma about serving them.

I like how snooty and particular he is with all the ingredients and the steps of the recipe.. that proves he is a great foodie as well as someone who is very proud of his culinary heritage and knows how to keep it alive. It kinda reminds me of what our didas thakumas used to say ki "jemon bhabe bolchhi thik temon bhabe koro, noyto shwad bodle jabe".. Loved narration flow. I am a punjabi and cook regularly. Respectfully wush to serve points of divergence for me. Feel kashmiri chilly is completely avoidable ( yes pak loves red taree but not in saag) and ghee is excessive despite the need for generous portion in sarson ssag. One tadka was good enough in which u cook mutton. The same was sufficient for saag too. Gur he has said is optional i might try next time. Traditionally i think lahoris use palak gosht and this one is perhaps an experiment

Why do you have to add gur..its not added in punjab and parts of north india..its only saag and ginger garlic chilli with salt that is added...gur is kept as a side dish with makki ki roti and sarso da saag
