What an ode to the "neighbourhood", almost personified in this case. Makes me so incredibly nostalgic. The sights, the smells, the colours, the weather, the season, the roads, the walls, the trees, the rain - all evoke an avalanche of emotions in me and take me back to a place we all knew in our hearts, but are unable to find around us, as readily anymore. But Kolkata still has that charm that we all want to nestle and get lost in. My family is from Lahore too, hence, Rahul's sentimental connection to that part of the world and the Punjabi cuisine is very much shared by me and my family as well. Even though, we are vegetarians (for the most part), this recipe will stay with me for a long time. I'd like to thank Saptarshi and Insiya for reviving such an important element of our humanity with each other - our 'para(a)'. To approach food from this understanding is a very unique, spiritual perspective, and I laud you both for it. And yes, "the wafting smells" of the neighborhood shall stay with us, till the day we close our eyes. Thankyou for this creation and for the alchemy of all these elements. It's beautiful. :) ❤️

My forefathers were originally from Lahore as well. We have some very interesting family recipes that cook vegetables or dal with gosht together. But I have never eaten Rajma Gosht. Will definitely try.

Rahul explains why he chooses not to do that in the episode. Pressure cooking it with the meat cooks it perfectly. Having tasted this recipe we can tell you the onions and tomatoes were perfectly cooked but still fresh. This is similar to how Italians don’t overcook their tomato sauces (always under 20 minutes).
