What scale is recommend to play over this?

Hi Matthew, thanks for watching. At this level, it's not about a single scale, as the piece changes key in several places. To improvise over these kinds of tunes, you need to become adept at harmonic analysis, so that you can deploy the appropriate scale or mode for the current key, or use the arpeggios associated with each chord. That's a bit of an oversimplification, but it's a start! Good luck.
