Berry Crumble with Homemade Ice Cream Ingredients For the topping: • 1 cup brown sugar • 1 cup all-purpose flour • ½ cup old-fashioned oats • 1 teaspoon cinnamon • ½ cup butter, unsalted and cold (cut into ½ inch cubes) • 5 cups assorted berries, fresh or frozen • 3 tablespoons granulated sugar • 2 tablespoons cornstarch • 1 lemon, zest and juice • 1 teaspoon kosher salt For the ice cream: • 1 cup half and half • ½ cup whipping cream • 2 tablespoons sugar • 1 teaspoon vanilla • Ice • ½ cup kosher salt Steps 1. Make the crumble 2. Preheat oven to 375 degrees. Lightly, grease a 10-inch cast iron skillet with 1 tablespoon butter. 3. In a large bowl, add sugar, flour, oats, and cinnamon. Using your hands crumble butter into the mixture, until resembles a coarse meal. Set aside. 4. In a large bowl, add berries, sugar, lemon zest, lemon juice, and salt. Gently, toss until fully mixed. Next, pour into cast iron skillet. Spread until even, and then sprinkle with crumble topping all over. 5. Bake until topping is golden brown and berries are bubbling, about 30 to 35 minutes. Let cool slightly. 6. Make the ice cream 7. In a quart size resealable bag, add half and half, milk, sugar, and vanilla. Seal tightly. Set aside. 8. In a gallon size bag, add 2 cups ice, and then salt. Place the filled quart size bag into the gallon bag. Seal gallon bag. Shake gallon bag vigorously for 20 minutes. Ice cream will have a soft serve consistency. Place in freezer until ready to use. 9. Once the ice cream is ready, add on top of the berry crumble. To make it even tastier, the crumble is best served warm. Serve, and enjoy! -- Peanut Butter Swirl Brownies with Ice Cream Ingredients For the peanut butter swirl brownies: • 1 tablespoon butter, for greasing • ½ cup butter, unsalted • 2 cups granulated sugar • 2 large eggs • 1 teaspoon vanilla extract • 1 teaspoon sea salt • ½ cup cocoa powder • ½ cup all-purpose flour • 1 teaspoon baking powder • 1 cup chocolate chips • ½ cup peanut butter For the ice cream: • 1 cup half and half • ½ cup whipping cream • 2 tablespoons sugar • 1 teaspoon vanilla • Ice • ½ cup kosher salt Steps 1. Make the peanut butter brownies 2. Preheat oven to 350 degrees. Grease a cast iron skillet with 1 tablespoon butter. 3. In a large bowl whisk together melted butter and sugar, until combined. Add the eggs, vanilla, and salt, whisk until evenly combined. Then, fold in cocoa powder, flour, and baking powder, just until combined. Next, fold in chocolate chips. 4. In the prepared pan, pour the batter. Next, add the peanut butter by dolloping 9 tablespoons on top of the brownie batter. With a butter knife, create a swirl effect gently through the brownie mix with the peanut butter. 5. Place in the oven and bake for 30 to 35 minutes, or until the center is set. Remove from the oven. Allow to cool. 6. Make the ice cream 7. In a quart size resealable bag, add half and half, milk, sugar, and vanilla. Seal tightly. Set aside. 8. In a gallon size bag, add 2 cups of ice, and then salt. Place the filled quart size bag into the gallon bag. Then, seal gallon bag. Shake gallon bag vigorously for 20 minutes. Serve, and enjoy! -- Leftover Citrus Bars Ingredients For the shortbread crust: • 12 tablespoons butter, unsalted and at room temperature • ½ cup granulated sugar • 1 ½ cups all-purpose flour • ¼ cup almonds, finely chopped • ½ teaspoon kosher salt For the filling: • 6 eggs • 2 cups granulated sugar • 1 cup flour • 1 cup assorted citrus juice (grapefruit, lemon, and lime) • Zest of all citrus (grapefruit, lemon, and lime) • ½ teaspoon kosher salt • 1 teaspoon baking powder • ¼ cup powdered sugar Steps 1. Preheat oven to 325 degrees. Line a 13 by 9-inch baking pan with parchment paper, leaving an overhang on 2 opposite sides. Lightly, coat the sides of the pan with 1 teaspoon butter. 2. In a large bowl, with a fork, whisk together the butter and sugar, until creamy. Stir in flour, almonds, and salt, until a dough forms. Press the dough evenly into the bottom of the prepared baking pan. Using a fork, prick the dough, all over. 3. Next, place in the oven and bake the crust for 15 to 20 minutes, until lightly golden brown. Remove, and let cool. 4. In a large bowl whisk together eggs, sugar, flour, assorted citrus juice, zest, salt, and baking powder. Pour into the cooled baked crust. Bake for 30 to 35 minutes, until center, is slightly jiggly and edges are set. Allow to cool completely. Then, remove from pan using the parchment overhang. 5. Cut into 2-inch squares and sprinkle with powdered sugar. Serve, and enjoy!

My go to sweet on a budget is cookies made with one egg one cup of peanut butter and one cup of sugar. That’s it! cook them in the oven for 8 min and there simple and cheep!

Butter is essentially shelf stable as well. It keeps on the counter for at least a week..it just needs to be protected from air dust etc by a lidded butter dish Tupperware etc.

It's funny that you mention adding salt to sweet desserts. As a young kid first learning to bake, my mom taught me to always add salt. It wasn't until I was older that I learned not everybody knew that. Salt really does help to round out and balance the flavors of a sweet dessert.

My faverite budget dessert is something my nanny used to make. She called it milk jelly and it's jelly cubes melted with just enough water and then topped up with a can of evaporated milk. Set it in the fridge for a few hours or overnight. So rich, sweet and creamy. One 2 ingredients and so simple

Canned evaporated milk and cubes of fruit jelly are very accessible in the UK so that's where my nan came into contact with it and i highly recommend it and think it's better then a normal jelly as it's so creamy

I know using a peeler to zest is his 'thing' but the $ store has a zester/grater that really works and it a lot faster and easier.

If you buy a lot of almonds, or any nuts for that matter, you need to plan things to use them for because they do go rancid not too long after you open the package. I keep nuts in the fridge, but even those will go bad. I haven't tried vacuum sealing them and keeping them in the fridge, yet, but will try that next. You might want to keep nuts in jars, not in original packaging. Also, citrus is not inexpensive in Connecticut, especially in fall and winter. Even lemons can get pricey.
