I've been having fun with the eggplant steak. Ever since the Gordon Ramsay eggplant video I've been on a mission to make better vegan eggplant meat! So far we've made an eggplant burger, eggplant wellington and eggplant fish... and I even made eggplant bacon back in the day! Now lets make a sausage.. Italian style sausage out of eggplant.

hahaha thank you!! I do think its an issue of shelf stable items. Something like this wont do well after more than 2-3 days. Where beyond can be made and actually comes out better after its all sat together on the shelf.

Sage is a good authentic flavor for sausage making. Also, anise seed as an alternative or in combination with the fennel seed.

I use fennel seeds and anise in making disk millet bread. They are good tasting.

Yes Sage is delicious for sausages! .... but not to be a flavor component for ITALIAN style sausage. Sage, along with few other key ingredients, is a traditional highline f flavor for regular breakfast style sausages which is what makes pork & turkey breakfast patties & links have their distinct flavor

Eggplant Italian Sausage Sausage Filling Ingredients: • 2 cups shredded eggplant • 2 ½ Tablespoons methyl cellulose • 3 Tablespoons mashed beet (or 1 tsp beetroot powder) • 2 Tablespoons nutritional yeast • 1 teaspoon liquid smoke • 3 Tablespoons water • 1 cup extra firm Tofu crumbled into BIG crumbles • 3 Tablespoons Red wine vinegar • Salt • Pepper • 1 tbsp Parsley • 1 tsp Garlic powder • 1 tsp Onion powder • 1 tsp Basil • 1 tsp Paprika • 1 tsp red pepper flakes • ¼ tsp Oregano • ¼ tsp thyme • 3 Tablespoons olive oil (Mark says 2 but it looks like 3) Sausage skin Ingredients: • Package of rice paper sheets • Dish of water • Potato starch for dusting 1. Mix all ingredients in a bowl. It should be somewhat dry as eggplant will release water when cooked. If it doesn’t come together, add slightly more water. 2. One at a time, dip rice paper into dish of water, sprinkle potato starch on surface. 3. Lay out the filling, on the starched side of the rice paper. 4. Turn the rice paper so it covers each end of the sausage, then roll the sausage up. 5. Cover the sausages and wait 30 minutes 6. Cook in oiled pan as you would cook sausage.

Looks good! Have you ever heard of oatmeal sausage? Lots of recipes for oatmeal sausage come from WW2 when meat was being rationed for soldiers. I think there's probably lots of potential to improve on 1940's oatmeal recipes!

I've tried it and it's my favourite homemade meat substitute. I change up the seasonings and make it into burgers. which I think work even better than sausages. Once it's in a bun with the burger fixings I think even most meat eaters would be happy with it.

You should salt the egg plant after putting them in the food processor and squeeze out some of the water and let them dry, this way the sausage would be a bit more firm at the end.

I feel like leaving out some of the oil etc I could make a healthy vegan sausage without too much issue using this method, thank you! Enjoy meat substitutes but the ones being sold at the shops aren’t always exactly great health-wise!

Leftover eggplant like that is awesome in spaghetti sauce! Especially the slow simmered kind. Okay, the rice paper "casings" are going on my list of things I must do! I really miss the snap you get when biting into a sausage, and vegan sausage in general just doesn't have that. Thanks! 😁

I think using rice paper casings help hold in moisture and flavor so it does not dry out so much.

I love your channel! It’s inspiring me to make more vegan foods again!! But I was wondering if there are any substitutes to methyl cellulose that are more readily available at your everyday grocery store? I know you use it a ton in your cooking, but I can’t bring myself to buy it because I don’t think I’ll end up using it a ton!

As always, love the video! One thing I wanted to mention, those rice paper wrappers you use also come in square vs. round. Just wanted to point that out in case you weren't aware. I find them super useful for a lot of things, and bought them initially for the rice paper bacon.

Any replacement for methylcellulose? Can't seem to find it in any nearby stores, and googling seems to find glue making mixtures in home improvement stores only.. Would any other binding/thickening agents work?

So you probably wont be able to find it locally. Its not something that is commonly stocked as a food item since its a food additive. You should be able to find a food grade online. Search for a high viscosity methycellulose. Unfortunately there really isnt a great replacement. If needed use an egg replacer as the binder.. you will simply need a LOT more! You can also use gluten flour! Maybe triple what I added. IT will be harder to work with, but should come out great!

This actually looks good and very much great idea, just going recommend maybe a mix of mushroom of some kind for “meaty” and possibly smoke them too. I been working with real meats so why not the same

Great recipe and great use for aubergine! I think I would have pre-steamed the sausages (as they had WG), left overnight, then rolled in the rice paper sheets, then cooked. I personally find that if you use wheat gluten it's better pre-cooked and left to mature, but I have also seen other recipes where no pre-cooking and it's turned out OK. This would also firm up the sausage overall? Many thanks again, great recipes!

That's what I was thinking, steam first and chill, then finish by frying. Also if they were further wrapped in parchment and/or foil they wouldn't absorb too much excess moisture while steaming.

I worked at a job that had this deli that had this Italian grandma bring in her specialty eggplant parmigiana every wednesday. 2 trays and it was sold out instantly every week. Wednesday at noon sharp if you were not there at this time you were screwed. I remember when wednesday would roll around and of all days my boss would say no just finish what your working on and you can go! 12:15 i would get there and sold out!

Tried this and they were way too soft and missing some flavor. I think maybe cooking the tofu first like a tofu scramble and then putting it in the mixture would have made it better

hahah so the definition of Chorizo is a spicy Spanish pork sausage. Not sure what you are referencing though growing up in a very heavy Italian community we had Italian sausage on the regular and I mimicked what I grew up with... and this is flavored just like Italian sausage! Thank you

Looks really great. Would be so helpful to start doing more closeups cutting into the product so we can more readily see the actual firmness and texture. I belive you used to do this more often. It was claimed to have a good sausage bite but visually it looked too soft so a closeup texture analysis would have helped.

Have you tried this with cooking the crumbled tofu first? I ask, because you both mentioned the soft texture and I’m wondering if this could make the sausage firmer. 🧐 I haven’t made it yet, but looking forward to it! Thanks for sharing! ✌🏻

Looks like Mush gummy texture to me , however. There is a brand of sausage they made back in the day Clled Red Rose, and that was a very soft sausage I absolutely LOVED, this could be my old days fix . So thanks for that 😉👌.. just that MOST people aren't going to like it IDT... I think soaking the eggplant in salt water to remove bitter flavor that it tends to have because of seeds would have been wayy better,, thennn sauté the eggplant to dry it out or bake it ... girlfriend don't like eggplant and she def didn't want more because she tasted it.. great starting point tho. And thanks soo much for sharing.

I made this tonight for dinner and as a meat eater I have to say this is VERY GOOD. I would highly recommend. I mixed everything up and let it set overnight in the fridge before wrapping and cooking. But honestly this is worth a try!

Really you just need to add an extra binding element to help make it denser! I would say adding a good egg replacer would be the best here to firm it up more

Looks like a great sausage! Did you ever try psyllium husk instead of the methylcellulose? Seems to have similar properties and also seems more available in Europe.

Methyl cellulose is not hard to find in Europe, I’ve bought it from the UK(pre-Brexit), Germany, France and the Netherlands

@@freyjasvansdottir9904 I have bought it from the UK, but that is less easy to do now. I can buy 100g of psyllium husk locally for €3. Importing methylc is far more expensive. I have seen others using psyllium as a binder - including The Happy Pear - so was wondering if Mark had tried it.

I really liked some of your recipes/methods so far, but this one is a massive miss in my opinion! :( The taste was not very nice and the texture was just completely off. We made the sausages for dinner and luckily we has a back up because us 4 friends all refused to eat them.

I made these yesterday and grilled today. I’m sorry, but NO! It was gummy mush! In past LC recipes, I’ve accidentally put in too much xanthan gum and it tasted like crap - slimy mush! That’s how this mouth feel was, and I followed directions to a “T”! Sorry - just doesn’t work for me. I’ll keep searching.

I've been trying to make a vegan andouille sausage that can be cut up and used in jambalaya or gumbo... Your TVP sausage with the alginate casing is the closest I've gotten (just replacing all the seasonings with cajun/andouille seasonings). But even with the casing, it still tends to crumble or fall apart when cut. The best upgrade I made was doubling the amount of methylcellulose, and that makes the texture ALMOST there. I'm wondering if you have any tips about how to make it even firmer, so that it will hold up to being cut into little sausage circles after being cooked? Thanks, love your videos!

More VWG, if gluten is not a problem for you. I would add a Tbsp of red wine or apple cider vinegar if adding more gluten. Cuts the cereal flavor.

This recipe fascinated me - texture was good. (Although I grated the eggplant and should have thrown out the skin) but flavor didn’t cut it for me. I think eggplant is tasty after sauté with garlic - so I think I might try that next time. Also found rice paper difficult to pan fry. Perhaps eggplant might make a nice egg roll if I used that wrapper instead
