great recipe! I tweaked it a bit for my own taste: 1. I blanche the lobster with chicken broth and ginger, then took out the lobster and saved the broth. 2. added garlic to the ginger when stir frying the lobster, and added the broth back into the lobster along with the sauce mix and let it cook for 2 min. came out great!

I was unsure about blanching but it was more tender than deep fried. Love your vids. To the point & excellent music. Looking forward to trying your other recipes.

@C exactly. blanching it loses all the flavour of the lobster. its the incorect way of doing it. No restaurant blanches it.

If you have a salty egg lobster recipe, I think others would enjoy. Also any other seafood Chinese recipes are a plus! I use this recipe with some spicy sauce added to give it a kick

Try the corn starch and deep fry technique. A little more work but that is the real deal way to do it.

+al sam yes you can. With stream lobster you can skip the blanching and go straight to stirfry.

what a waste of lobster !! 1st. lobster needs to be slightly starched up and fried to 80% done !! reason: so that sauce can stick to each bite of lobster!! 2nd, Ginger, shallot fried to aromatic then add green onions, then lobster, a bit of cooking wine, then broth with sugar, salt and oyster sauce !! 3rd, close lid and let to simmer to done !! use starch to slight thicken the broth into sauce !!

Yeah, this dish is traditionally done fried. But maybe he's trying to make it healthy.

Yes, that is right. Not everyone could deep fry food at home so it does get messy. Half the time I do deep fry it first but just want to give an alternative way to cook it and it is a little bit healthier this way. It will still taste good this way but of course deep fry with a coating of flour does taste a bit better.

Terrible no flavor..have to deep fry with corn starch the lobster first...much more flavor..your way is poor man and lazy way.
