“Save Room For Pudding!” | Fire & Brimstone's Australian BBQ Platter Challenge!!

Kicking off the upgraded and SUPER-SIZED Fire & Brimstone Australian BBQ Platter Challenge at Fire & Brimstone BBQ in the Hillside Hotel of Castle Hill, Sydney, Australia! Brave and hungry diners have only 45 minutes to finish a BBQ platter piled high with brisket, pulled pork, smoked chicken, a pile of chips, and 4 additional large sides of their choice (I went with coleslaw, potato salad, brisket baked beans, and mac n' cheese). Winners earn their $89 meal for free and a spot up on Fire & Brimstone BBQ's Wall of Fame! Was I able save enough room to try their famous Sticky Date Pudding?!

Great video Katina! Wow,that looked so delicious! The chicken is so moist in smoking bbq as it MUST be brined to maintain that juiciness other very dry. Smoked chicken is by far the best chicken and the chef is obviously a master. Thanks for sharing!

For me it's the simple rub n a low n slow method, get one side/end hot enough to get a good crispy skin n then switch to cooler end to finish it off

"low and slow" cooking techniques give the connective tissue (collagen, gelatine) time to break down without damaging or overcooking the protein, it's why sous vide is so popular because you can control the temperature to a pretty exact science to ensure it's cooking evenly all the way through. The collagen is what makes the meat seem extremely juicy and soft

​@@mateaukalua4426 That sounds like an electrolyte issue. If I get dizzy, forgetful, or really tered I do double electrolytes for one day and cut back to 1.5 gallons of water. After 30 days things start to change. It gets a lot easier.

When they first brought out the giant platter, I thought the container of the red cabbage coleslaw was full of diced red onions (Katina’s fav) 🤢.
