Hi Colleen! One tip that might help, you can wrap your meat in plastic wrap before putting into your bags. This does 2 things, your meat doesn't have any chance of getting freezer burn and it allows you to reuse your bags. I have designated bags for all of my meat in the freezer that I just reuse. 😃

Tip; place a damp dish cloth under your cutting board to keep it from moving around. Works good!

I live alone and often buy larger packages of meat to portion out for meals. My problem has been remembering what is in my freezer. I was visiting a family member that has a white board above her freezer that she uses to keep track so she can meal plan. I purchased small magnetic white boards from the dollar store to attach to my fridge freezers as a reminder of what I have on hand. Hope others will find this a helpful tip. Thanks Colleen for sharing cost saving tips with us. Take care.

Colleen, I would wrap each kind of the cut individually in saran wrap, and place all 6 of them in one bag. Then I can take out only the 2 or 3 needed the night before cooking, to thaw. I also portion bacon this way, 3 slices at a time. This really does extend the life of frozen meat considerably. I really enjoy your videos and recipes.

Perfect timing! I just got back from the grocery store with a full slab of spare ribs that were on sale for $1.48/lb and came to $7.60. I'll separate into 4-rib sections (its just me) and vacuum seal for the freezer. Each meal will cost less than $2.

Thank you so much for explaining correctly on how to prepare meat to portion into smaller portions. I appreciate how you followed Canadian government guidelines for food safety preparation. I live in America and also follow the American guidelines for food safety. So important to prevent cross contamination and hopefully not having contamination of a food bacteria. Passing on a tip I do when packing food into freezer bags is to use food tongs to pick up food and place in freezer bags. Prevents touching outside of freezer bag with hands. Enjoyed this video and so very helpful. I too am a senior trying to keep our budget much better also.

Add the liquid for your sweet and sour recipe to the bag and it will marinate in the freezer. I always buy the family size pack of meat on sale and repack it. Then i always have meat in the freezer for a decent price. If you debone your own meat then you can make stock/broth from the bones also, another savings.

Whenever you share your food prices in Canada, I'm always shocked at how much higher your costs are. Food is pricey here in NY too, but we do have a variety of grocery stores to choose from, and there is one that is better than others, so we usually shop there. Thanks Colleen for sharing your knowledge. I do buy bulk packages and break down into meal size portions. When I'm ready to repackage- wash my hands, label the bags, then I turn the top of all the bags so the "zippers" out/over (like a cuff), put the meat in all the bags, then wash my hands again, unroll the top of each bag and seal, pushing out the air of course. Turning over the top of the bag keeps the zipper cleaner so it seals better & easier. Washing after filling all the bags but before sealing reduces the chance of "goo" all over the outside of the packages.

I have been buying the loin primal cryovac meat for years. Used to get it for 99 cents a lb, but the last one was $2.29 a lb. And I used to cut a roast or two, and several chops and the cubes for stir fry or stew. My husband now has dentures, so I now cut a generous sized roast and season it for porcetta and let it sit in the fridge for a few days. When I've cooked it and cooled it I will slice it thinly and portion it out for sandwiches for him. I cut some cubes and mix them with some ground pork and make formed ham (I had no idea it was so simple) and again when it is cured and I have cooked it I will slice it thinly and portion it out for sandwiches. Given the cost of deli meat you can see how much money I am saving. The rest of the meat I simply grind up for sausage meat (I have a couple of seasoning mixes that are really good). I have a vacuum sealer and have never regretted the investment. I also have a meat slicer that will also slice bread and I can kick myself for not buying one years ago. Just one thing. Please, please, please put at least a wet paper towel under your cutting board to keep it from slipping around. Lastly, we have a kitchen supply store in town that will sharpen knives (they have a Tuesday special of $2 per blade - regular cost is $3). Maybe check to see if you have one (we have Hendrix Kitchen Supply) and what they charge.

I had to chuckle at you using water to avoid freezer burn. I have done that for years for certain veggies, but .never thought of using the technique for meats As one example, French cut string beans get freezer burned very quickly so I package them in water. I also freeze small quantities of certain herbs in ice cubes. Would you be able to show how to carve up a beef tenderloin, or is that way too expensive in Canada? I love the way you present things in such a personal friendly way.

I would LOVE it if you could give a similar chicken demo. Blessings. Edit to add. I realize how much money I am spending and wasting by not doing what you have shown. Thanks so much again. At 11 yrs old we got our first Jersey Cow and it was my job to milk, separate, make butter etc. By the time I was 14 we had 4 cows including 1 Holstein. The separated milk went to my cousin to slop the hogs. At the end of the year we got a hog. Usually around 350-440lbs. It was always the best pork. I hated milking the cows back then but I sure miss it now. That was 50yrs ago.
