Good recipe, made easier by a) mixing mixture in a stainless steel bowl before pouring into cooking pot, b) having pot on medium high heat whilst stirring to a boil, then cleaning side of pot by either brushing with water OR covering with lid to waterfall sugar syrup into the fudge mixture, then remove lid! c) turning the heat down to whatever is your burner's medium low, and letting mixture bubble until 240° f without disturbing by stirring. >>Keep in mind, as stated in demo, that Time. Stands. Still!!! from 222°f.Jacking up the heat is no solution.

White chocolate is made from cocoa beans. It's the cocoa butter, milk powder and sugar. It just doesn't have the cocoa solids
