Say I do, to this simply delicious , moist Almond Cake! One bite of this cake will make anyone fall in love. The iconic flavor of love and happiness.
Ingredients:
Almond Cake
o 3 cups cake flour
o 1 ¾ cups granulated sugar
o ½ teaspoon baking soda
o 2 teaspoons baking powder
1 cup buttermilk
o ½ teaspoon salt
o ¾ cup unsalted butter (at room temperature)
o ½ cup sour cream
o 6 egg whites (at room temperature)
o 2 teaspoons almond extract
Almond Buttercream
o 8 cups confectioners sugar
o 2 cups unsalted butter (at room temperature)
o 1 teaspoon almond extract
o ¼ cup heavy cream
Instructions:
1. Preheat oven to 350 degrees, oil and flour two or three 9-inch cake pans. Mix flour, baking powder, baking soda and salt together in a bowl. Set aside for later.
2. Using a mixer and paddle attachment, cream butter and sugar on medium. Add egg whites, mix until completely combined. Add sour cream and almond extract, mix until well blended.
3. Add dry ingredients, to mixer on low. Rotating between adding the flour mixture and buttermilk.
4. Scoop even amounts of cake batter into each pan. Bake for 20-25 minutes or until inserted toothpick comes out clean. When done, remove cakes and allow to cool.
Almond buttercream Instructions:
Using a mixer with paddle attachment, cream butter. Slowly add in confectioner’s sugar. Next add in heavy cream and almond extract. Mix until smooth and creamy. If too thin, add more confectioner’s sugar.

This sounds delicious!! I owned a bakery for 10 years, creating wedding and all occasion cakes. Everything was 100% from scratch. I love that this is exactly what you do, too, and this one looks incredible!

This cake continues to inspire me--I recently learned about your channel approx. 5 months ago. If you don't mind, would you please share how you mastered your piping skills. AMAZING!!! I made this for my birthday (I wasn’t letting anybody pay for a bakery cake. More $$ for gifts). It was fantastic. I used Swiss buttercream and no decoration (I lack talent). Thank you, you helped make my birthday special.

Yes the mixer is called apple green, I believe it was a limited color. Yes, I use all purpose flour.

Can you substitute cake flour to almond flour? If yes, will the cake look the same?

Thank you for the question. Almond flour is more dense than cake flour. You can sub 1/4 of the cake flour, yet replacing it all will make the cake heavy.
