When my daughter was 13 she made a cake from scratch and called me and said it didn't rise. I asked her if she put baking soda in, she said no. The recipe called for soda, so she put in a teaspoon of cola. She is now 44 and we still laugh about this.

Never overmix cake batter my friend. Otherwise you will activate the gluten in the flour and it will make a very dense, tough, and bread like cake. If u overmix sponge cake batters such as genoise or chiffon, u will deflate it and it will not rise properly and become dense

I made my first homemade cake last week & amazingly enough it turned out perfect. I made another one yesterday & something was off. It cooked slightly quicker, had a dome, & wasn’t quite as moist as last time. No, no ingredients were cold except maybe the soft butter which obviously had to be. I’m almost certain it was a little too much flour. I even remember when I was measuring it out thinking it was slightly over but that I’d rather it be too much than too little.

If you open up your oven before the minimum baking time that's required, you can offset the temperature of the oven and that can cause flops such as deflation
@pollyjazz3 жыл бұрын
Best way to not over mix the batter is to add it last. That way you can really cream the butter or fluff up the eggs or whatever without ruining the cake. If the cake has anything like nuts, chips, fruit, or veg, i add the flour and mix it in by hand and add the extras while you can still see plenty of flour in the batter. Then mix it just enough that everything is wet. Also for fruit cakes like apple if you mix in and toss around a couple of spoons of the flour mix with the fruit before adding to the batter it keeps all the apple chunks from sinking to the bottom. This i got from my grandfather ( who was a great baker) but have never seen as a tip from anyone else. I love your channel and your recipes! 💕

I have learned sooooo much even having baked for tons of years. My biggest frustration is oven temperatures even with thermometers inside. Every oven seems to be different in terms of temperature. We retired in Mexico several years ago and I have finally mastered metric. Also, we moved three times in three years for different reasons; more to the point, each oven was soooo different some gas, one electric. It’s been fun and your videos are a great help and certainly, in some cases, learning new tricks. Muchas gracias!

@@mayaflici374 Ohooo girl, you're a brave one! We also use the metric system, like exclusively, and altho it's bothersome I convert the cups to whatever the equivalent is in grams, you find good sites for this online. Done it a lot of times, now I know the equivalent for the most common things like butter, milk, wheat flour, sugar, etc, but ofc I still have to consult those sites from time to time. This is what people need. I home school my kids and we do baking as a part of home ec. I have taught them all of these things along the way. They have it etched into their minds. LOL One thing I do to prevent over mixing my batter is, I use the mixer when alternating the additions of flour and liquid, I usually mix the liquids in using the mixer, and the flour I stir in with a rubber spatula. This gives such a nice texture to the cake and it avoids over mixing.
