GARDEN CORN SCALLOP
3 cups corn(fresh, canned, or frozen)
1/3c chopped green pepper
1/2c sliced, stuffed green olives
1T dried parsley
2T chopped onion
1/4c butter
1/4c flour
1/2t salt
1/4t pepper
2c milk
3 eggs, slightly beaten
4oz shredded cheddar cheese
1/2c soft bread crumbs
2T butter, melted
Heat oven to 350. Grease 2qt casserole dish. In large skillet, meld 1/4c butter and cook corn, green pepper, olives, parsley and onion fo 2 mins, stirring constantly. Cover and simmer for 10 minutes.
Stir in flour, salt, and pepper until well blended. Add milk all at once. cook until thickened, stirring constantly, about 1 minute. Gradually stir in eggs and cheese. Pour into prepared casserole. Combine bread crumbs and melted butter, sprinkle over corn mixture. Bake at 350 for 45 minutes or until set. Makes 12 servings.
