Oh, man- we had neighbors with that habit. We called it “drive by zucchini-ing”. They moved years ago and I still can’t decide if I miss it 😂.

My parents have a huge garden that they still tend in their 70s. We were always trying to give away produce, especially zucchini! I think my Mom made every zucchini recipe known to humankind. I also think I got my love of fresh produce from them. To help with dinner, often I'd be sent out to "pick a salad" or pick green beans, corn or peas. Nothing like eating them right off the plant. 😊

A few things - I don't know if people say this enough in the comments, but you are very good at picking great recipes to try. I can imagine that being overwhelming with how many cookbooks you have. I love how real this channel is. You shop at Aldi and the recipes are realistic to make. So many channels only shop at Whole Foods and make recipes that are overly complicated. Lastly, I hope you are doing well after your surgery!

My weird grandma always just fried zucchini. She's 99 now, but most of my best memories of her, she's standing over her electric skillet with her special cooking fork, flipping over zucchini. She'd set the slices on a paper towel to cool, and I would burn myself so I could eat some first. She tended every little round so carefully. I would not be surprised if she fried zucchini for hours every day in the summer. I will always equate her with fresh veggies. She grew her own, but her house was atop a hill and completely surrounded by tomato fields. The farmers let her take any that had fallen off the vine. So she always had peeled, sliced tomatoes in a cool whip container in her fridge. She also had bil, one who grew melons and one who grew sweet corn. We had her own frozen sweet corn all year round. She also made her own pickles. Between her and my country granny, we ate really well growing up!

I live in France. I made some chocolate courgette (zucchini) mini loafs and shared them with my French neighbors. They weren’t sure. I explained it’s like carrot cake so they tried it and loved it! That last recipe sounds really tasty. And…congrats on 50k! Hope you are doing well.

My mom added a really simple zucchini recipe to her repertoire in the (I’m guessing) mid-1970s: Grate zucchini Mix with salt Allow to rest Squeeze out some of the water Melt a lot of butter (say, 1-2 tbsp per cup of grated zucchini) in a sauté pan Add minced garlic (to taste) or garlic powder (but fresh is better) Sauté briefly, then add zucchini Cook, stirring, until tender Black pepper to taste Eat!

I make the same recipe from The Victory Garden Cookbook by Marian Morash published 1982. She has a few variations to this recipe such as adding garlic, which your mom did, also using half shredded summer squash, adding chopped dill or dill weed. These are how I make it. It’s been a family favorite since 1982 when I bought this book, lol. I make it often! And you’re right it is very simple but delicious. ❤

I was never a massive fan of zucchini, but an 80s staple was always chocolate zucchini cake and my goodness is it delicious!! A moist, unique cake I'd recommend to anyone with zucchini on hand. But it MUST include little chocolate chips. It just makes the cake what it is.

I love a zucchini casserole that a 90 yr old neighbor made for me one time. Its zucchini, shredded carrot, onion, cottage cheese, and cream of mushroom soup. Its topped with croutons toasted in melted butter. Its weird looking and sounds weird too but i love it! 😂

For me dinner could be hummus on toast (delicious!) but I find myself cooking more now that he is here. I could be vegan easily but he is a meat eater. Having these veg recipes gives me ideas for sides I would be very happy with and he can have a slab of meat 👍🏼. I hope your healing is going well 🫶🏼

My dad had a huge garden when I was growing up and the zucchini was rampant in July and August. It was so funny to go to church and see the piles of zucchini everyone was trying to give away. Problem was, everybody gardened back then, so nobody needed zucchini! (Or peppers, or tomatoes, etc.) I'm so grateful now to have grown up eating good fresh vegetables. These recipes look great! You're looking great, too--hope the healing is on track! ❤

I went to my cookbook shelf to get this book so I could follow along, and discovered mine is a 1968 version. Same cover picture, same name, but two years later. A zucchini pancake recipe is in there, but not the other two. Guess that’s the nature of compilation books! Since I have it out, I think I’ll look for a few new recipes to try this week.

🤍💛🤚 Thank You Anna , CtBs I forgot to mention on another of Your videos , regarding a Zucchini recipe from the 1970s Zucchini Boats , a Los Angeles Times Newspaper recipe clipped out by My Mom then , ... filled with groundmeat , Egg custard , Onions , Parm and the main flavor is with Nutmeg * & Tarragon * . Which really made It a memorable Dish from My Childhood , VoC ( Veganized of Course ) very warm , cozy , maybe Autumn and Winter flavor , nostalgia , even though a Summer Fruit ? Maybe a Southern CA Indian Summer Squash ? The Pancakes I want to VoC too , Sour Creme'and fresh Chives on top on the side probably too 🤍🩷

I’m from New Jersey and the stewed zucchini from from nj is spot on. That is very close to how my mom would make it she would sometimes add diced eggplant. It you add a little grilled shrimp and fresh grated Parmesan on top you have a wonderful meal healthy meal even better with a side of garlic bread

Just a suggestion on the baked zucchini recipe to simultaneously fix the onion texture and seasoning issue. Caramelize your onion before tossing it into the casserole mix.

Here's a zucchini recipe you might like, I tried was ok. Enjoy your videos, Mock Apple Pie 5 c zucchini, cut in half, seeded and cut in slices 1-1/4 tsp sugar 1-1/2 tsp cream of tartar 2 tbsp lemon juice 1/8 tsp salt 2 tbsp flour 1/2 tsp nutmeg 1-1/2 tsp cinnamon Pie crust for top and bottom Combine all ingredients except crust mix well. Fix Pie crust, lined Pie pan, pour in filling, add top crust. Seat edges and cut suits in top crust. Bake 400 deg for 45 to 50 mins

I make something like that stewed zucchini often. But I brown a sliced up kielbasa first, then do the veggies (sometimes just using canned stewed tomatoes) and add the kielbasa back in to heat through. Delish. Glad you're doing so well!

Question for you, Anna, Queen of Vintage Cookery: do you know if baking soda reacts oddly with vintage aluminum baking pans? My mom used to make zucchini bread in an aluminum loaf pan. It was good...except for the part near the bottom of the pan, which had an odd flavor, sort of like a mixture of chalk and metal. Im still here to tell the tale, so it wasn't super harmful, but I've always wondered what caused it. Thank you! I absolutely love your channel! ❤

In my experience, it's anything acidic. I only use my aluminum pan for pasta. That said, my iron Dutch oven makes the best tomato dishes.

I LOVE zucchini. I will definitely try these recipes. ETA: For the zucchini pancakes, I would make a dip of sour cream, lemon juice, and dill to serve with them. For the baked zucchini, I would grate it or slice is VERY thin, and sauté the onions, just like you suggested. A little bit of dill might taste good with that, too.

Welcome back Anna, What a great start of recipes to make with zucchini. I believe I did try them all & I also liked the stewed dish as my favorite. I added some garlic & onion powder as well as Italian seasoning to mine. YUM. I had a similar recipe from online…the only difference is it didn’t contain 🫑. I am so happy I came across this, I love zucchini. I love your videos, some of the things you make remind me of my mom or grandma. I also remember some of the cookbooks you have used. Last night I actually made something similar to the stewed zucchini recipe. I had zucchini, mushrooms, green peppers, yellow onion, canned diced tomato's, lots of fresh cracked pepper, salt, garlic, and thyme, I precooked it in evoo and the put it all in a spaghetti squash and baked it. So yummy.

When I was young and cash strapped, one of my go-to foods was canned stewed zucchini. I believe it was DelMonte and about 49 cents a can. I loved it so much, cold out of the can. I’m making your recipe!! Thanks and take care. ❤️

Your zucchini pancake recipe is similar to zucchini fritters. The recipes I've tried, we don't put sugar and we season withsalt, pepper, garlic and add some cheese. They're delicious

Zucchini is one of those vegetables that is easy for me to grow, but haven't done in it in quite some time. I should try it again, this is a vegetable that I buy often and I like using them in so many different recipes. The zucchini pancakes, just like potato pancakes except with zucchini... they look yummy! And you were using my mom's plates from my childhood! That took me back 🙂The baked zucchini... yeah, I'd saute the onions for a bit, maybe with a clove or two of garlic, then add the zucchini and cook for a few minutes. How are you getting around? Better?
