You can replace the food colour by using Kashmiri red chilly powder or deggi mirch which are milder in heat but richer in and color. PS. Any kind of authentic Schezwan recipies will use Schezwan pepper even if its Indo-Chinese food.

u can take whole kasmiri chilli and soak in hot water then make paste of it n use instead of food colour thats how Schezwan sauce works....

If u r eating street food to 5 start hotel everywhere they will use Color not only in Chinese food in maximum food, like kadai paneer, paneer butter masala, chicken butter masala and biryani etc all items which has red color gravies or any other colors.
