I would recommend to step into the souls series with Elden Ring, then Dark Souls 3, Sekiro, Dark Souls 2, and Dark Souls 1. In that order. They are good games with lore, story, and combat that are good. I also think if you open with these games, it will be easier for you to step into other variety games so you become a gaming channel in general rather than a game channel, as souls/soulslike games are very varied, and viewers highly value combat, which means you can play any game on the channel that has good combat, then expand again and so on. Hope I did a 6/10 job explaining at least but up to you in the end. Good luck either way though.
