How to make a roast beef in a Weber kettle.
What is the best way to cook a roast beef in a Weber, low and slow. In some liquid to retain as much moisture in the beef as possible
There are plenty of beef cuts to use for roasting, in this video I used topside, which is a lean muscle from the cow thigh.
As with all my recipes I run through the selection, preparation, seasoning, BBQ set up, times and temps, so you can recreate this recipe at home.

Main Ingredients:
1.5kg (3.3lbs) topside beef roast
2 tablespoons of olive oil
50 grams of butter
40 grams of French onion soup mix
1 cup of beef stock
Extra Ingredients:
2 to 3 tablespoons of red wine
2 cloves of garlic
1 teaspoon of black cracked pepper
Herbs (as many as you want)
Gravy Ingredients:
2 cups of pan juice strained
4 tablespoons of plain flour
Enough water to make flour into a batter
Items Used:
57cm (22”) Weber Kettle
Chimney Starter
Heat proof gloves
Briquettes
Fire lighters
Heavy pan
Tongs
Knife
Chopping board
Foil
Feeds: 4 to 6
Style of cooking: Searing / braising
Preparation Time: 1 hour (allowing to come to room temp)
Cook Time: 3 hours and 10 minutes (10 minutes to sear, 3 hours braising)
Rest Time: 15 minutes
Cuisine: French / Australian
