You would be surprised by how many people who would appreciate a drink like this.

they prepare a lot of the ingredients beforehand. Go to the bar and check it out!

I think it depends on why you go out. There are times when you go out for $3 well beers, maybe splurge on some craft, or get a cheap quick drink with the house liqueur and don't think too much. There are other times when you drink only one or two drinks but shell out $10 or more for those. Like a Blais Burger, or one of Brad or Greenspan's dishes, There's a time and a place of it all, and thank God for that. It allows for great artistry in food and drink! :)

I have to agree although I certainly wouldn't use bar rescue to back me up. If you're having a nice brunch date, or a quiet pre dinner drinks, sure one would and should appreciate a fine cocktail. Sip, savor, chat. Perfect. But after work pounding or crowded bar scenes, it just won't be appreciated, nor would the time to be available to a bartender to make. Besides how much must one charge to make typical alcohol beverage margin on these drinks? LN2 is not cheap to use or store.

I'm not saying these aren't valid, they probably do make a big difference for those with well-developed palates. The problem is the vast majority of drinkers either don't care what they drink, or have very minimal expectations. Most of them aren't going to sit there and be able to appreciate the work that goes into an average drink, much less this much extra work.

I think he meant that, this is where people fall short when carbonating anything. Venting during carbonation isn't unique to this drink.
