Well, it took me a bit as the whole crew came down sick. The kiddos got over it in three or four days, but it took me 2 weeks. Of course. Anyway, I used flank steak, because that’s what I had, and I didn’t have any leek, but it turned out delicious anyway! Just made it tonight so the kiddos can have it tomorrow, but my husband and I tried it tonight and it was great! I had thawed some homemade wheat bread from the freezer and toasted that, and with a little cheese it rounded it out nicely. I’d have like a bit more kale, but was running low, so next time I’ll add more. I can see this becoming a regular in our mealtime lineup! Thanks!

This looks soooo good! I just made a kale, sausage, and potato soup. This looks like it would be equally delicious! And I think I might even have all the ingredients to hand, so not much to buy. Is this pearled barley, or regular barley?
