One thing is not mentioned in the docummentary is that the wine that’s bottled is not the same that’s used to season, wich is in fact discharged to produce vinegar or brandy. Also the sherry industry only survives thanks to the whisky industry. Without it, many bodegas would have already closed, since sherry consumption has declined a lot in the last decades. I now see a mass production of those seasoned casks, made of new oak and filled with lower quality wine that doesn’t meet the standards to be bottled. People should become more aware of what a sherried whisky is nowadays, since whisky prices don’t stop growing.

Great vid. Can someone explain what is the difference in terms of flavour between seasoned casks and real old solera casks. Also does SMWS only do finishes in sherry casks?

Good question! Ex-solera bodega casks will have contained sherry for long than the specially created seasoned casks, so will generally be less active and the influence on the whisky will be gentler, with less impact from tannins and other wood-derived flavour compounds. Seasoned casks are more active, impart more tannins and those wood-derived flavour compounds - and are also much more consistent in terms of quality. The SMWS works with a wide variety of sherry cask types, and also offers additionally matured whisky from a range of other wine casks - red wine, port and other fortified wines. Great film. In the Pacific Northwest of the US. We say it takes one year per inch for newly cut lumber to dry for use as lumber. Approx 11 %. Spain is a lot hotter and dryer, than here, so the time can be faster. I had to laugh at the man at the Sherry house wearing a Dead Kennedy's concert t-shirt. What does a new barrel cost SMWS?

I've found a bourbon cask maker over here who talks a bit about different levels of char and flavor. I'm going to ask him about pricing.

Ivy is native to Europe, who are we to say whether the ivy or the tree should live or die...well I guess we decide to cut the trees down for casks...which in turn kills the ivy...wait are we the baddies??

@@DanielEbner-jk7twI know my uncle in Ireland always cuts the Ivy off his trees at home. He has a good 80 acres of land. It may come down to laziness that this Ivy is not cut! Very important to mind the health of your trees especially oak!
