Today I made a batch of traditional Scottish rolls :) Also known as Scotch rolls, morning rolls (because traditionally they get delivered to the shops and sold in the morning) or in the West, we call them ‘Morton’s rolls’.
You’ll have noticed if you watch my meals of the week videos on a Sunday, we have soup & rolls quite often…and these are the rolls :) Absolutely delicious with an almost chewy texture and signature sandpaper top :) Fill these with whatever you would typically have in your sandwich…or simply have them with a generous scrape of butter!

What I used: Will make 10-12 rolls
800g (28 oz) Strong white flour
1 Teaspoon salt
50g (1.7 oz) Lard
500ml (15.5 oz) Lukewarm water
2 Teaspoons sugar
7g (0.24 oz) Fast acting yeast
Semolina or rice flour for dusting

Salt kills the yeast, it won't rise if there is to much salt

Thank you for this recipe! My husband is Glaswegian, we have lived in the US for 10 years and he misses burnt rolls. I just made these for him and he was so happy! He said they are just like Mortons!

My family went on caravan holidays in the early to mid '70s to places like St Andrews and Dunbar. My mum would send me to the shop in the morning for 'well-fired rolls'. They were sold on big wooden trays. Thx for this memory.

Your buns brought back so many memories of going with my grandfather to the bakery in Glasgow every day with his dog, Chummy. I was 5 or 6 years old. They lived on Occle (?) Street and he and my Gran took us to Arran once. Unfortunately, I got terribly seasick.

NOTHING anywhere in the world compares to morning rolls. I love to cook & bake, but have long been intimidated by the thought of baking these myself. I SO enjoyed this simple recipe/video & I intend to "slay the dragon" & attempt this recipe. Thank you!

Do it! Go slay that dragon!! You will be so proud of yourself! And this is the perfect first-time yeast bread recipe. It’s simple, and almost fool proof. The key is not to continue adding flour when you’re kneading. Adding too much flour will make a heavy and dry end result. When I first started baking yeast doughs, I wish someone had told me this. So many times, you see people kneading with lots of flour on the board, unless it is too wet, adding that flour isn’t necessary. Dough is better off a bit wet than adding too much flour and end up with a hockey puck 😂

I made a batch of these last week. As an exiled Glaswegian in England for many years I still miss them! Very easy to make and popped them loose into the freezer. We have had them several times already this week for lunch.

My mum and Dad are from Scotland and we lived in Scotland for 15 months. I used to try it get to the co-op to get these kind of rolls. Yesterday mum asked for these rolls, today I look forward to trying making them.

It's been 7 years since I've seen the shores of Scotland and my family there. I will be attempting these rolls just to take my spirit on a wee journey through my taste buds. And then I'll probably just go ahead and buy the plane ticket to get the real thing. :)

I first tried your recipe over a year ago and it has become our favourite for yeasted rolls. Easy to make, tasty, visually impressive and they keep amazingly fresh. I make them most Saturday nights, fridge the shaped rolls and bake them Sunday morning. They are splendid! Thank you so much. 🥰

As Ive got older I’ve made more time for baking and cooking but can never seem to get the results I see on the instructions videos … until today !! 😳 I miss Scottish morning rolls terribly as I moved to England years ago and they don’t do them properly here , they’re all dense baps 😡… I got the ingredients and followed your instructions and timings to the letter and I now have 9 PERFECT rolls which I’m impatiently waiting to cool down to get intae them . Thank you SO much , I’ll be doing this regularly now and introducing my 2 daughters to the joys of pulling apart the rolls you want from the joined up ones . I’m aware I’m 2 years late to the party but a great recipe needs a great thank you - Thank you 🙏 👍🏴󠁧󠁢󠁳󠁣󠁴󠁿

Just made this dough. Halved it, put in two loaf tins. OMG. The best I’ve ever made. Think the lard gives the delicious flavour. I used my stand mixer as I only have one working hand. Thank you so much for the recipe. I’ll make it often. 😋

I called them Mortons rolls, I used to work for Mortons Bakery in the Drumchapel Area of Glasgow. Your Recipe is almost exactly the same as Mortons and they look identical.

grew up in greenock and was a van boy for aulds in the early 70,s,we always had mortens rolls in the mornngat home , the driver for mortons then was a guy called wee alec if im right it used to say temple bakery on the side of their vans,great memories,do you remember barm biscuits?

I've seen another recipe for these where you ferment the dough overnight before shaping and baking, did they do that at Morton's or was it just like this?

​@@duckandflea Nope, I worked there 9yr, no doughs are left overnight to ferment 😂, they use fast acting yeast, then place the rolls in a streamer, and they would lay there till there were ready to bake, from flour to roll took 8hrs, the steam room was the secret to the rolls being crispy

Wow! I'm a Scot living abroad and really miss morning rolls. They look amazing! Am definitely tempted to try them. And it's very handy that you've also done a video on Lorne sausage.

I usually buy rolls from Aldi, I made these and I can never buy another roll again as after tasting these it's ruined the buying experience for me. I will made these again as it was easy and they taste amazing.I just tested two of them out with smoked bacon and egg, I'm stuffed as they were pretty filling. Thanks for making this video.

@WhatsForTea. It’s been over a year since I found your recipe. We no longer buy bread buns for our sandwiches as they do not stack up against this recipe. I buy 16 kg sacks of marriages strong bread flour and 2 - 3 times a week I bake these buns. Great for a bacon sarnie or any other filling to be honest. Thank you very much

I followed the recipe to the letter and a reminder to say that if you make the rolls bigger then you have to bake them longer. The recipe is perfect and they turned out delicious. I had mine with bacon and tattie scones.

A very big thankyou my favourite roll anytime . Down here in the north east we have poor substitutes , always bring dozens back when visited Scotland , never seem to last. so now I have no excuse , (stay safe ) 😷

Just adding a big thanks for this recipe. I've now made these a number of times and the rolls reliably come out really well. Usually use unsalted butter instead of lard (otherwise have to buy lard specially for this). Have made with other flours for variety (granary, wholemeal, khorusan, though always keeping at least 50% strong white) and again they come out consistently well every time, have not gone wrong yet.

These are amazing! Living as a Scottish implant into the US for the last decade or so, I've been looking for a morning roll recipe like this. My rolls before came out quite dense and small, which were tasty enough but nothing like this. Made these today (without the rice flour as I didn't have any) and they came out wonderfully. I have a couple set aside for lunch tomorrow before my family devour them! Thanks for the recipe and the great instructional video! x

Great tutorial, I’m definitely giving this ago!. Don’t know why, but I took a notion the other day for some Morton’s rolls!. I bought 8 at the News agents, they were done by the next morning!. Absolutely delicious!.

Didn’t think these would be so easy! And they turn out just like ma rolls fae hame… I can see this being a long and loving relationship between me and these rolls. I make a lot of stuff from the “what’s for tea” collection. This is one of the easiest I’ve done. Big fan of the minced round too.

Hi greetings from Germany, I love Scotland and I love the scottish rolls with bacon and a fried egg :-) When I visit Scottland it is often my first go...to look where i can buy a bacon roll :-)) I try out today your recipe and it sooooooooo good. For me it is nearly 100% original. Thank you very much for sharing it. It'll not be the last time I bake it.

OMG love that you shared recipe.. I recall when I was wee going with my Uncle not a blood one but you understand I’m sure Anywhoo we would walk done the lane to pick up the mornin rolls! Lol I think that my uncle and the baker had a bit of a trade going on as my uncle usually brought a cabbage turnip or onions etc Thankyou not only do I have the recipe for my fave rolls oh you can purchase here Ontario Canada but usually pricey and hard to find, but there are many times your videos bring up lovely memories of a different time. Originally from Blantyre live in Palm Beach Florida I dream about these rolls with sausages or bacon i like the well fired ones, my mother used to go early in the morning to the bakery to get rolls for us for breakfast, got the sausage recipe now I've got the roll recipe thank you so much.

Managed to make these using your recipe a couple of days ago....spot on taste, as a Scot living down south dont seem to sell fired rolls, made a batch and felt homesick....easy peasy recipe to follow....thank you for showing👍

Made a batch of these a couple of weeks ago and the batch failed to rise properly, investigation found that the yeast failed. It was in date by a long way but still failed. Rolls still tasted great but were heavy. Made a second batch yesterday with good yeast. What a difference, much lighter with lots of air pockets. Tasted great this morning with bacon and egg. Did the kneading in a kitchenaid to make life a bit easier, although guessing how long to knead for wasnt easy. May try by hand next time. Anyway great recipe and a great video. Thanks

Just going to get my square sliced sausage made and in the fridge and these rolls made tomorrow, exciting stuff and thanks Cheryl! :) I remember the Dalziels bakery van coming around Lanark, there was a line drawing of a horse rolling on its back and below the slogan ' A good roll does satisfy'....I am that old lol ! New to your channel Cheryl but made these rolls this morning & they turned out really well. They look & smell delicious, can't wait to have them with our tea tonight.
