That was an authentic Valencian paella being made. Paella, a bit of a Spanish cliche pehaps, but it is widely eaten especially at family celebrations and fiestas where you can often see "Paella Popular" being dished out from vast pans. If you can see your paella order being made, as in this case, a bonus.However, there's a downside. Quality varies. The paella served in many tourist area restaurants is crap. Heavily salted and rice heavy, a gift to the rip off merchants because they overcharge and skimp on the fish or meat content. Never accept one in a small pan. It will almost certainly be a microwaved frozen one. Sorry, the notion of paella and chips made me cringe.

@@ScottishCoupleInSpain That's OK. Don't get me wrong.. I love chips, or should I say "patatas fritas" in the right combination. On my first post Covid to Manchester, UK, I recently had the best fish and chips I've tasted for years in Hebden Bridge. Never found anything comparable in Spain. When I first moved here fifteen years the thought of eating octopus turned my stomach but now no problem. My favourite paella, btw, is black rice or "Arroz Negro" made with squid ink. Delicious done well. Recommended if you've never tried it.
