Do you use professional "posed" pictures with these layouts too? I have a ton of 8x10 do to Kmart's and Sear's packages where cheaper and came with that size.

You definitely could! A lot of times I will use larger photos in place of a grouping of smaller photos or sometimes in place of a large background piece.
