I am such a big fan of Vicki!! Real soon I will a vertical pellet smoker and I am so excited to just have that extra space to do big cooks finally! I really just want to smoke the weeks food for the family and stop having to use to cookers all the time! I am filming on one cooker and in the garage another one is running something else sometimes and that is food for the family during the week! But someday I will have a nice vertical that runs on wood and charcoal!! The hinges look great brother!!

Always enjoy your videos that show you lighting the fire on the larger smokers. It appears like the shelves still have remnants of a previous cook. Do you clean them beforehand?

I do scrape them clean and get the big debris off but I didn't steam them clean this time. I deep clean the smoker about once a month.

I use that same set up...charcoal for heat and wood chunks for flavor. Do you get white smoke(not thick)but light and steady(not thin blue)? If so is that coming from charcoal igniting? Or lack of oxygen?

I think more so that is from the charcoal getting lit... any thin white smoke dissipates rather quickly.

Vicky seems to be a real work horse. Very efficient getting all that meat to fit. But, aren’t you afraid your brisket will taste like chicken? Hahahahaha… just getting my jab in at other comments! She really is, such a solid cooker. The size restrictions can be a gift and a curse at times. As you can see I have to get creative at times. November 4th... Right wings... Hmm... that might be a little tough BWAH! I've never had anyone say the brisket tasted like chicken, LOL. Thanks Grumpus for watching and about that comment... No not a new camera... the lighting in my garage is amazing. All LED lights in my garage and it shows. I noticed it too... when I am on the side of the house it's dimmer and not nearly as bright. Especially at night and there is no sunlight to fight the light in the garage. Thank you Sir... I will be working on the edit for part 2 tomorrow, so it can go up on Thursday! Glad you did a vid on Vicky this week. Your reasoning for using Vicky was the primary reason I made my final decision to go with the insulated vertical smoker myself. That thing call " sleep ". So happy to see you opening and closing the doors with ease,very nice. And I'll join in the fun. Paint those hinges 😄 . Lastly, you should have dug up your sweet potatoes by now. Despite the deer issues I was wondering how you did? I expect you still got some. Oh, and congratulations, I understand your Eagles are now the top team in their conference over the Cowboys. And the Seahawks are #1 in our conference, although we have only lost one game so far 😁 . Just ribbing you. Still WAY to early in the season. Have a great day. (Still can't believe that one fellow said what he said about the placement of the chicken) Oh hell, one last thing really. You said you had more " right wings" then " left wings". I thought we agreed to always keep politics off this channel? Sorry, couldn't help myself 😆😅🤣.

So... since I can I am going to address this first... I was cracking up at the right wing left wing thing while I was editing this video. So yes I wanted to get some sleep but did I... nope. By the time things got going I was up and there was no point in trying to get back to sleep, it was a VERY long day. This cook was for 2 different events and the second was a party I was attending. I've usually waited until the first frost to pull the potatoes to give them the most time to gorow as possible but I will be pulling them this week most likely. Thanks for the reply on those comments... some people think they can say anything and deem it constructive criticism. Ugh... Anyway... yes the Eagles are doing well in our division and that's all I have to say about that, LOL. Thanks as always for watching and commenting!

@@SDSBBQs so I'm very happy I gave you something to chuckle about. The moment I what you said about the chicken 🐔 I knew what I was going to say. Hell, it practically wrote itself. About the idiot who made that poor comment, we truck drivers have a old saying " everyone is 10 foot tall on the CB". These folks would never talk this way to one's face. They are petty little cowards. The great news is you have a lot of great viewers. Now about the sweet potatoes. I have not grown them before but with my horticulture background and every thing I checked out how others did ( mostly the homesteading folks) first frost works. Most wait until the vines start to die back,kinda like regular potatoes. And they have been harvesting the last 2 weeks so I figured you might have. Im looking forward to us a little garden throw down on the sweet potatoes. It would be great to get others in on the action. Kind of like when Justin of BBM did with trick my bbq. Starting with getting the folks to even start their own slips from the potatoes ( it looks REAL easy and cheap) ok I gotta go, I'm going on a bit to long as normal, later.

I know it's not a big deal to prop the door open but have you tried leveling the smoker..? If my mobile smoker isn't perfectly level my doors will act up. Oh and don't forget to paint the hinges.. Great video dash..

Don't think so... I think the size of the meat has WAY more to do with it than the difference between choice or prime brisket.

I haven't had ANY complaints either way about the chicken being over the brisket. IMHO it helps but who knows.

Hi, yours is the first smoker I've seen that uses water too. Is there a big difference with having water in your smoker?

I believe so. It really helps keep the temp even and also adds moisture to the food while it's cooking.

What temp were you cooking at?

The top of the smoker was running closer to 300 while down at the bottom near where the brisket was it was closer to 250 or so.

Thanks for the reminder, it is except the repairs are most often at the worst times, LOL. I am really good at Tetris, but don't have the patience for puzzles. Prob rocking with Vicky, I've cooked and put WAY mo re fires on that cooker and I "know" how it cooks.

Great videos. Love what you do. Only one constructive criticism. For food safety reasons you should never cook chicken on top of any other food. You run the risk of contaminating the other food with salmonella.

This is such a common misconception that I promise to do a full blown video on it. Cross contamination is when you have raw food that can / does come in contact with ready to eat foods that are not cooked. When you are cooking both meats and especially when the beef in this case has a higher finishing temperature than the chicken there's no problem. The point is to get rid of bacteria and make sure the food is cooked to safe temps. When you do that you kill all bacteria.

When the brisket has a higher finishing temp than the chicken... the brisket will cook way longer and anything that would drip on the brisket from the chicken will be cooked off and killed germ wise. So Yup... chicken over beef.

And thats your theory... try that at any professional establishment and you probably won't do that again....have you ever taken a food safety class might want to invest into that before you cook chicken again. NEVER EVER CROSS CONTAMINATE CHICKEN WITH NO OTHER FOOD ,ROOKIE MISTAKE IF YOU ASK ME.

I have taken and have a current food safety food cert. those recommendations are for raw food storage. Look it up.
