I tell you what, I bought that fat separator from one of your other videos, and my clients just love the au jus I give them. I sit in ice so I don’t have to wait, the fat congeals almost instantly , I save the hard fat for another cook, and place the liquid into serving cups. It’s almost as good as the sprayer you recommended!

I try these things and recommend them based on if they work or not... the ones I use a lot are the ones I recommend. I've had the one I am using I have broken the handle off but the separator part works JUST fine so I just send it!

Hmm... I know my way to Front Royal very well... That would be a pretty penny in delivery fees... You might have to meet me a little closer but we may be able to work something out. I took it off of the cutting board and it is on my insulated cup. It didn't stick very well to the cutting board because of the surface.

Do you always split your small orders into flat and point? Or do the customer specify that they want 1/2 pound of each? Can they ask for all flat or point?

For the most part I always split the orders up so I'm not left with more of one part or the other. The few exceptions are when my friends order they will let me know that they want X# of lbs of the flat and another will get an opposite order of the point so it's even.

Hey dash how many days in advance do you smoke your briskets for a catering event? Wondering if its better to time it out so they are fresh off the smoker or better to prep a day or two ahead

More often than not I am finishing them the morning of the events. There are a few times when I will have them done a day in advance. I much rather have them finished ahead of time as to being late for/to an event because there was a complication with the cook.

300 for about 30-45 minutes. It depends on if the brisket came straight from the fridge.

When letting meat rest , how long do you thing it should rest ? Second will it differ from the type of meat you cook. Also how could I Purchase 2 1/2 pounds of brisket. Thanks again

I let it rest for no less than an hour, but resting depends on how much time I have prior to when I need it. Yes, things like chicken and smaller meats will not need to rest as long because then aren't as massive and won't retain the heat as long. 2.5lbs of brisket from me?
