In the Philippines, we have sisig as a "pulutan". Pulutan is any dish that goes well with alcohol. So when Filipinos are drinking, it is a given that sisig will be the number one food on the table. :)

Haha, they said "adobe" as in the mud bricks, instead of "adobo" as in the Filipino dish. That guy was raving about the garlic flavor of the rice and if Senior Sisig infused adobo flavor into the rice, which is genius by the way, the trick to achieving that is equal parts vinegar soy sauce and water with lots of garlic and bay leaves. It's one of those flavors that you can't imagine just by understanding how it's made, the whole is much greater than the sum of its parts.

Filipino food specially those from the Central Luzon areas, are definitely influenced by 300years of the Galleon Trade between Acapulco mexico and the Philippines, during Spanish times.

i definitely know these galleon trade route pass the san bernardino strait. between south luzon and northern samar. there is even an island named pulco. short name of apaculpo where the galleon stops after that long sea voyage. they stops there to freshen themselves. bathing eat food do some little trade with the locals. before they head to manila.

my concern about the way you say steam rice probability is that, left over rice or evenly cook rice..., be specific. asian can guess steam one to a cook one. fried rice are leftover or indeed colder ones to be treat the rice for mornings breakfast from dinner(in our country) . be better to understand the culture of the food. but occasionally to other places its an innovation to form another kind of dish or cooking...

Kenneth Sigua yep, but there’s a difference between diversity and same. Diverse it is cuz it’s mixed with all other type of cuisine, but it’s not similar to Mexican. We don’t really eat tortilla and beans with everything. We don’t even have much carne asada dishes. It’s either rice and chunk of meat, or grilled but not asada type. That’s why it’s not the same.

I really wanted to like Señor Sisig, gave it three chances. It’s just very mediocre at best and at other time it was just bland dry meat that’s not at all what sisig is. The meat is not even what sisig meat is at all, there’s no part of the pig head at all. The third time I ate there I actually got sick something questionable about their meat!!!
