Hey chef, I’m born and raised in south Louisiana and of course gumbo is one of our most famous dishes in our local cuisine here in south Louisiana. You made it very good and very close to how we make it down here. Only difference we do is it’s always green bell pepper with the onion and celery for the trinity instead of red or yellow to be authentic, but other than that you got it on point. For regional differences on gumbo, you can add tomato or tomato sauce and a red-brown colored roux (the step before you get to the chocolate stage) if you want it like a traditional New Orleans style seafood gumbo or you can leave the tomato out and using a chocolate roux as you done here for a traditional Acadiana style gumbo that has also migrated to New Orleans as well since the 1960’s. But there are many different styles of gumbo in south Louisiana like seafood okra, seafood filé, seafood chicken, chicken and sausage, any one of the wild game gumbos like duck and andouille gumbo or ones made with rabbit, deer or squirrel and we even have a green gumbo (also called gumbo z’herbes, we pronounce it like gumbo zab, it rhymes with jab) that consists of various greens with meat (or for catholic lent, no meat). And always garnish with fresh chopped green onions and parsley, always. This is non-negotiable lol. Anyway, keep up the good work Chef. I saw ATL and gumbo in the same sentence and I was like uh-oh 😐 but you did very good. Good job. This was a very well made gumbo.

@@GiveThx4Him Hey fellow Louisianian, for a fun twist on the trinity during carnival time, you can use a red onion, celery and yellow bell pepper and it makes the Mardi Gras colors purple, gold and green! But only for carnival time lol

Im pretty sure she's from the Gulf Coast tho, so her gumbo will be similar to Louisiana's I was born in Gulfport, MS, and our food is very similar, and I moved to Pensacola, Fl, and the cajun seafood here is pretty close too. I BELIEVE she's from Pensacola, but dont quote me on that...just something I think I read before....the Gulf has the best food, especially seafood, in the country...hands down, but I may be biased...lol

@@rjaymac1242 Lots of south Louisiana folks moved along the gulf coast from Texas to Florida and brought Louisiana cuisine with them. Of course however, coastal Mississippi and coastal Alabama share heritage with south Louisiana and there are long standing cultural and culinary relationships that go back to French colonial times. Yes, the gulf coast has the best food in the US. I’m from the New Orleans area and the coastal Florida panhandle is like my second home every summer and we go to coastal Mississippi all the time to eat crab legs at the silver slipper in Bay St. Louis and play the casinos along the coast and relax on the beach too out in Biloxi.

Hi Carmen! Old Texan here. Now retired in Thailand after 35 years living here! Thanks for the simple video to understand the instructions. Opening a new restaurant with the wife next week. I'm going to test this on my neighbors. So far, they like the Tex-Mex, pizza and various sausages we make. Not to mention my wife's local cuisine. After watching 5657852542228542 videos of recipe's LMFAOO, yours was the easiest and simpliest. Everyone else talk TOOOO much. this was my second time making gumbo and mannnn this was sooo good i basically ate the whole thing myself and shared one bowl with my neighbor to see if I was tripping or not. girlllll this gumbo was better than Fishbone's (here in Michigan that's like the go to for gumbo) and babyyyyy I may never have to visit fishbones again just like I'll never do Olive garden after learning my own alfredo sauce. ooohhwwweeeeeeeeeeee yes you did have us. THANK YOU!!!!! even my fav YT talk too damn much or be having all they own special seasonings i can't get from the damn store.

THIS was AWESOME to watch... THANKS for sharing your technique for making such a BEAUTIFUL GUMBO!!! I really loved how you boiled the shells of the shrimp and used that stock like you did... YUM!!! I grew up in New Orleans, but as a kid I didn't know to appreciate so much of the Southern flavas and ways, especially the foods, until I was an adult, and had to move away, and really MISSED it SO MUCH. I wish you or someone could come up with a pot that has a continuous stirring apparatus because my back and knees would never let me stand so long to make the roux LOL!! Blessings for a safe, healthy and happy 2023... I sure loved your video!! Stay cool.... :)

I use a stool and sit to make a roux. I don't pay attention to the rules Heck I can make a dark roux in 12 minutes and a lite roux in 6 minutes. Oh, and it tastes good to.

Slimy gumbo is perfectly fine. Gumbo means okra. In Africa, they don’t even use a roux. Just the raw okra. The roux came from the Cajuns that were kicked out of French Canada

I always use real butter and unbleached flour for my roux. My family's holy trinity is onion,peppers(green and tricolor,red,yellow,orange)and garlic. My mom hates celery so she never used it. I tried it both ways and I prefer to eat celery raw, I don't like it cooked. Everyone in my family who cooks, has their own little twist and it's all yummy! This looks so good!!! 👌

You got me when you boiled the shrimp shells! My Dad was from Bay St. Louis, Mississippi, and my grandmother was a creole chef who taught him well, so I always look for authenticity! They always added chicken wings and stew beef to the mix, but I understand that there are all kinds of gumbo. We will agree to disagree on the garlic...but you did the thing Chef!!!!

I'm from Louisiana, and my motto has always been there's no wrong way to make gumbo...now here we would just call that okra gumbo, but I love seeing the different "flava" everybody brings with this timeless dish😊

Yes exactly I definitely nice to see a different take on gumbo. There's more than one type of gumbo. I'm allergic to shrimp so I'd make my gumbo without shrimp.

That’s something about us south Louisiana people, we can have the main dish for the holiday like a Turkey for thanksgiving or a ham for Christmas but we always are cooking up foods from our traditional local cuisine to go with those centerpiece meats like gumbos, jambalayas, red beans, white beans, etouffees, dirty rice/rice dressing, fricassee, sauce piquante, seafood dressing, cornbread dressing, shrimp creole, crawfish pasta, stuffed mirliton, stuffed peppers etc
