Chef Alden, Thank you. I think I have forgotten how much I loved to cook Cajun. I'm alone now - husband passed, kids gone to live their life, so I kinda quit. But now with you suggestions of freezing for later I think I may get back into it. Louisiana cooking is usually for many people but no more. Thank you. My freezer is gonna be full for those days I don't feel like cooking - and I can't stand all the pre-done dinners. Thank you! You are on a roll. I am so glad I found you.

Perfection as always. I especially like the filling/ingredients, etc., breading for its crunch and the crawfish sauce is PRESSURE! Perfect for a chilled bottle of Sauvignon Blanc and Pinot Grigio.
