海鮮蒸鍋
材料:
基圍蝦一斤
沙白一斤
蠔一桶
蠔(連殼)
元貝5隻
海花螺一斤
澳洲龍蝦一隻
鮑魚12隻
花甲一斤
扇貝(大)6隻
冰粒大量
處理:
1. 花甲,放大碗內,加入冰粒,清水浸。
2. 沙白,放大碗內,加入冰粒,清水浸。
3. 花螺,放大碗內,加入冰粒,清水浸。
4. 鮑魚,放大碗內。
5. 基圍蝦,放大碗內。
6. 元貝,放碟上。
7. 桶蠔,擎乾水,放碟上。
8. 預備一隻大碟,倒轉放鑊內。
9. 花螺,清水洗乾淨,擎乾水,放碟的一邊。
10. 花甲,清水洗乾淨,擎乾水,放花螺的一邊。
11. 沙白,清水洗乾淨,擎乾水,放花螺的另一邊。
12. 基圍蝦,清水洗乾淨,擎乾水,放沙白旁邊。
13. 桶蠔,加入生粉一湯匙,撈勻,清水沖洗乾淨,擎乾水。
14. 扇貝,清除內臟,清水洗乾淨,擎乾水,放鑊邊。
15. 鮑魚,擦乾淨殼及輕手擦乾淨鮑魚肉,擎乾水,放蝦旁邊。
16. 蠔,放在蝦前面。
17. 龍蝦,打直一開二,除去內臟,清水沖洗乾淨,放碟中間。
烹調:
1. 在鑊內加入大滾水600毫升。
2. 冚蓋,大火蒸6分鐘。
3. 蒸好。
4. 隨個人口味伴以醬汁食用。
5. 完成,可享用。

Ingredients:
Shrimps 1 catty
Hard clams 1 catty
Oysters 1 bucket
Oysters (with shells)
Scallops 5 Nos.
Sea snails 1 catty
Australian lobster 1 No.
Abalone 12 Nos.
Clams 1 catty
Scallops (large) 6 Nos.
Iced cubes a lot
Preparation:
1. Clams, put in a big bowl. Add in iced cubes, soak in tap water.
2. Hard clams, put in a big bowl. Add in iced cubes, soak in tap water.
3. Sea snails, put in a big bowl. Add in iced cubes, soak in tap water.
4. Abalone, put in a big bowl.
5. Shrimps, put in a big bowl.
6. Scallops, put on a plate.
7. Oysters (in bucket), get them drained. Put on a plate.
8. Get ready for a big plate. Put upside down in wok.
9. Sea snails, rinse thoroughly. Drain. Put on one side of the plate.
10. Clams, rinse thoroughly. Drain. Put besides of the snails.
11. Hard clams, rinse thoroughly. Drain. Put on the other side of the snails.
12. The shrimps, rinse thoroughly. Drain. Put besides of the hard clams.
13. Oysters (in bucket), add in 1 tbsp of tapioca starch, mix well. Rinse thoroughly. Drain.
14. Scallop (large), remove intestines. Rinse thoroughly. Drain. Put on the edge of wok.
15. Abalone, brush the shells and lightly brush the meat. Drain. Put besides of the shrimps.
16. Oysters, put in front of the shrimps.
17. Loster, divide it into 2 shares vertically. Remove intestines. Rinse thoroughly. Put in the middle of the plate.
Steps:
1. Add in 600ml of boiled-up water in the wok.
2. Cover it up. Steam at high flame for 6 minutes.
3. Steam well.
4. Add in seasoning sauce upon personal favorites.
5. Complete. Serve.
