Braised pork knuckles with salted fish

鹹魚燜豬手
材料:
急凍豬腳3隻(已切粒)
鹹魚2件
處理/程序:
1. 預備一鑊水,豬手,放鑊內,加入粗鹽一湯匙及米酒2湯匙,大火煲滾,烚豬手粒3分鐘至完全滾起,清水沖洗乾淨,擎乾水。
2. 洗乾淨鑊。
3. 白鑊,放豬手落鑊,大火爆香,放上碟。
4. 大火在鑊內燒熱油一茶匙。
5. 鹹魚,放鑊內,轉最慢火,繼續煎。
6. 鹹魚已煎熟,其中一件,壓碎,加入豬手,炒勻,另一件備用。
7. 加入調味料:
a. 蠔油3湯匙
b. 老抽一湯匙
c. 冰糖3大粒
炒勻至收汁,加入紹興酒2湯匙,炒勻,轉大火,加入大滾水完全蓋過豬手面,大火滾起,冚蓋,轉中慢火,燜30分鐘。
8. 豬手已燜了30分鐘,熄火,焗15分鐘。
9. 檢查豬手是否已燜腍。
10. 豬手,大火滾起。
11. 完成,上碟,可享用。
Braised pork knuckles with salted fish
Ingredients:
Frozen pork knuckles 3 Nos. (already cut in pieces)
Salted fish 1 No.
Preparation:
1. Get ready for a wok of water. Put pork in the wok. Add in 1 tbsp of cooking salt and 2 tbsp of white wine . Heat up at high flame. Boil the pork for 3 minutes until totally boils up. Rinse thoroughly. Drain.
2. Rinse the wok.
3. Plain wok, put pork in the wok. Fry well at high flame. Put on a plate.
4. Heat up 1 tsp of oil at high flame in wok.
5. Salted fish, put in the wok. Turn to the lowest flame and continue frying. Squash it.
6. Salted fish has been cooked well, add in the knuckles, fry well.
7. Add seasoning:
a. Oyster sauce 3 tbsp
b. Dark soya sauce 1 tbsp
c. Rock sugar 3 big cubes
Fry well until the sauce becomes thick. Add in 2 tbsp of Shaoxing wine, fry well. Turn to high flame. Add in boiled-up water just covering up the knuckles. Heat up at high flame. Cover up the wok. Turn to medium-low flame and braise for 30 minutes.!
8. The knuckles have been braised for 30 minutes, turn off fire. Leave it for 15 minutes.
9. Check the knuckles if they have been softly braised.
10. The knuckles, heat up at high flame.
11. Complete. Put on plate. Put the salted fish on top.
12. Serve.
