My guess to aerate and remove the egg shells because of all the eggs they crack by hand.

To catch any bits of shell, membranes, or (as seen in the last shot of that scene) any yolks that escaped being broken up by the mixer. It’s a standard step in any larger-scale egg processing.

Definitely not crispy, but it looked cooked through. Meat that thin cooks extremely quickly in a deep fryer.
