Boy. What I wouldn’t do to be at the convent. Even to help with the mid construction cleaning of debris. I’m 65 but was raised to help my Dad for the 11 years he single handed lay renovated our 100 year old house. ❤️❤️

Yes, the basement is so creepy... Even more strange because I am from Canada and we used to have few big community of convent here. From more than a decade (aprx) you have no idea how many scandals went to the newspapers concerning abuse of children in convent, monastery, etc. Poor orphans who died, who were abused, beaten, students, Indians, etc. They have lived horribles things and now are traumatized people. So when I see the basement, I don't like it.

Don’t think that’s viable option bc I do believe the basement stairs open up into the front entrance hall. It’s the closest opening to the front door even if going downward. Potential for all manner of confusion and misdirection of visitors.

Yo Billy had an idea! Dont replace the floor/ceiling in basement in that small section, finish out that small section in basement & have as wine area w/seating. Then have a glass bridge supported by oak beams to other part of dinning room. That would be amazing cool ! Cheers Kirk

What about a glass floor/ceiling? Then the 'wine cellar' can be exposed in the dining room. It would keep the light and be a really fabulous feature. Obviously you will have wine fridges that keep wine to an ambient temperature, so light wouldn't be a problem?

Also you could stick a bar in the dining room then any draught products you have, you can put the cellar below in the basement, I would stick it in the corner where the alcove is. 2 meters wide, means people can be served drinks while have food.

That old fridge was probably a cheese aging box. Definitely fitting to have one. Maybe once you get it cleaned up. Have an artisan cheese maker come give a class, then you can make an age cheese for events at the convent to go with all the vine.

Years ago there was a beautiful French Restaurant in the Southern Highlands south of Sydney in Australia. They had a basement in an old sandstone building (early 1800's) and we used to go there for special dinners...sitting in that lovely room, with so much character and charm and so warm - just lovely.

A wine shop we visited in France had a glass floor section. You could look down to an illuminated wine cellar below and it looked beautiful. It also gave natural light to the cellar from above

I know you have exposed the beams and other things, but some of those walls and its old construction would be awesome to preserve behind a glass panel or something of that nature.

I need a Yanis to help my little house. He's a hard working fella. Certainly has learned a lot from the master carpenter. Would like to see how Simon's house is doing. When do basements have a floor below it? What is down below? Putting cement ontop of wood is surprising, as well as seeing sand and soil on top of flooring tiles. I guess there wasn't for thougt . There must have been a coal bin somewhere? Or was it all wood fire heated? Always new discoveries
