If you make the cabinet higher you will create a nice space to put your window covers behind it over the cup holder area.

I think the no build is a better idea and you can decide what setup works for you and then do some building as you perfect it.

Watching from NC. My 2017 Pacifica has an axillary battery. It is connected to the car plug in the back & that runs my fridge. I don't plug my fridge into my generator unless I absolutely have to. I think you have the same fridge as me also.

Looks like youre off to a good start. My favorite van lifer is Rosa. She lives in her Honda Element named Elrond. If you check her out im sure she will give you some great ideas. She keeps it very simple and stealth.
