Great chicken Greg! Keep putting out the word about the harmful effects of hydrogenated cooking oils. Recently I made Nashville fried chicken for breakfast. I prepped my chicken similar to yours and fried in Avocado Oil. I used the the Spice Sauce (mud) that Andy (from Andy Cooks) developed after his visit to Nashville and meeting with Ms André Prince. I used some left over rendered beef fat that I save from some ribs I slow cooked in the oven the month before. This lard or oil is much more healthier than what the stores call lard. And to our surprise, no heartburn. Cheers

Ha, I used to not like dark meat either when I was a kid, but it grew on me over the years and it’s almost fool proof. Appreciate the discount code, I’m buying this fryer even though I despise cleaning them as I was a fry cook for some time in my early culinary career. Back then we used beef tallow with a bit of vegetable oil to prevent frothing. Can’t wait to try this recipe, Cheers.

I personally don't think peanut and sunflower oil is that bad of an oil. Canola oil is horrible and have never bought it because it smells even when fresh. I use a smaller cast iron kettle to fry chicken in. Or a deep Lodge cast iron skillet. I love fried chicken cooked right. Yours looks fantastic.

Hi Greg, not a direct criticism of you but just an overall view of you bbq KZbin guys when I bought my big green egg 12 years ago and watched videos to learn it was always grill not fry as it was so more healthy but that’s now gone out of the window. Perhaps you and your other guys could explain the change of direction

I'm not going to speak for the other channels, but I have done two carnitas recipes (pretty much pork and spices boiled in pork lard) on this channel; the first was 10 years ago, and deep-fried ribs about 5 years ago, and a deep-fried hamburger about 5 years ago, so I don't think I have changed directions. I don't advocate eating fried foods regularly, but on occasion, I'm fine with it. Moderation is key, I guess. Thanks for the comment!
