I had to chuckle when you said you cook enough for an army because my dad taught me and he was a cook for the local army base so yeah we cook enough for an army too. One good thing about it though, we never had a meal that there wasn't enough for seconds for all of us.

Amy, you are so right about missing all that craziness when the kids are grown and gone! Mine had Boy Scouts and football practice and baseball practice and on weekends birthday parties not to mention homework and science and social studies projects, studying for tests, learning multiplication tables, etc etc. and then when they got older soothing broken hearts from girl issues! Now, silence! They are grown and gone and my husband passed away with brain cancer but I told you that already. I now have dreams that I’m trying to find him in the house. I’m hollering for him thinking he’s in another room. Sometimes I find him in my dreams but other times I don’t and I wake up crying. Grief is an awful thing and I hope none of you ever have to go through iT! So any recipe you can think of girl! Put it on this channel! I love them and you and the cows and chickens! Maybe one day I can find love again! Could a girl be that lucky!!

MS Amy, please take this with a little hint and not criticism. Please oil in pasta water only for lasagna., otherwise the sauce doesn't get inside the pasta. If you cook the pasta about 2 minutes less than the package directions then drain it( but save a cup of the pasta water) and mix it with some of the sauce ,just enough to coat it, then you can finish the sauce as you do. Use the pasta water to thin out the pasta if need be till you combine them. The pasta water has not only the taste of the pasta but also the starch with helps thicken the sauce and flavor it too. Mother of 6, grandmother of 13, great I grandmother of 2. Yea, I have had practice, I also was the only girl with 5 brothers!

Gotta love a quick nutritious meal! I tell you my boys are growing fast, I feel you Amy! One is 15 and the other is 2. Sometimes I wonder why we had to wait so long for that second one, but I know he is just Gods wonderful blessing as they both are. There is something about a little one when you are older and appreciate things more. He is just a joy, a lot of work for an old Mama and Daddy, but pure joy! So one keeps on our toes mentally and the other physically! 🤣 Have a good evening!

Congrats on that little one! I've personally noticed through my lifetime that children who are born to more older and mature adults seem overall like they're naturally more adjusted. They seem to react to life with greater ease. In other words, it would seem they're less likely and usually don't overreact or get so emotional like a lot of people. But that's just what I've noticed, lol!

You are clever! Hiding super nutrition in kids' favorites is been my secret for many years. Finely chopped spinach looks like parsley, grated carrots, grated zucchini or squash, cauliflower. I'm alone now, but I still do this to meatloaf and meatballs. This is also a good way to extend meat dishes as it adds to the nutritive value of my meals. Amy, I will be trying your sauce!

Spaghetti is a great quick supper unless you make the meatballs which probably take longer. I always make meat sauce with mushtiims, onions and bell peppers. Truthfully, I use canned spaghetti sauce and doctor it up. I have always used Hunts....the cheapest kind but the kind we like the best. I also break my spaghetti noodles into halves or thirds because otherwise I wear my spaghetti! 😂 I would never be brave enough to order it in a restaurant. What a mess I would be in. But I sure do love it. The last I've made I've done in my Instant Pot then freeze the leftovers. Turns out great esp since I live alone. Good to see you both. Let's see I'll just type the recipe to you right now. I do have the recipe but the video is like a year old and that takes too long to go look for. 28-ounce can Whole Tomatoes with the juice 2 small cans Tomato Paste Hand full of baby carrots Half of the 28-ounce can of water 1 envelope spaghetti Seasoning (I use thick and zesty) Cook on low for about 20 minutes to develop flavor. I also Sprinkle black pepper and Oregano to taste. MEATBALL recipe: Ground beef Sprinkle of Garlic Powder Sprinkle of Onion Powder OREGANO Dried parsley fresh minced Garlic Drizzle of OLIVE OIL 1 or 2 Eggs depending on how much burger meat Bread Crumbs (I use Italian seasoned) Parmesan I mix the ground beef with a Sprinkle of all of the above and scoop and roll out as large of Meatballs as you want. Bake at 375 degrees F until done. Place the Meatballs in the sauce and serve over spaghetti noodles. Please let me know how you like it when you make it.

Carrots does add the sugar and a smart to get the veggies in for the kids. I laughed about you saying your blender was possessed! And after I mix up my meat ball mixture or the meatloaf mixture I scoop out about a tablespoon of mixture and have a small skillet or pan hot with a little olive oil and cook it until brown and done then I taste it to see if it need more spices. I also add the Parmesan cheese and to the spaghetti sauce after it’s cooked for more added flavor.
