I love Clarissa Dickson Wright and I thoroughly enjoyed watching her and Jennifer Paterson on “Two Fat Ladies”! I was sad to hear it when she passed & I’m glad to see her again, here.

They worked well together & obviously enjoyed each other’s company a lot. Great stuff! Gotta admit…I’m still looking for a source near to me for veal kidneys to make Jennifer’s “deviled kidneys”. Weird recipe, yes…but intriguing. 😁

porpoise Is dolphin yes? I don't have my glasses but I think that is what's being said. Please don't eat it if so. :) I sat in a restaurant as a kid and dolphin was still on the menu in Florida when i travelled there. Just wrong. If it is something different, please tell me because Google keeps sending me to Popeyes chicken lol

@amylee3531 there is a fish called dolphin (also known as mahi-mahi) it is a fish. Porpoise are a marine mammal, like a whale. If you ate dolphin in Florida you ate a fish. So no worries. However, there is no real way of telling what was eaten in the middle age. I do think it may have been the mammal.

Great about the food knowledge, not so sure about the documentary ! Why did you choose such an androgyn character to play the king ? Why everyone has clothes going up to the neck when he is nearly naked torso ? This documentary learned me less about food and royalty than about the sexual tastes of its director 🤢

"He was a Flamboyant dresser that likes to be *alone* in his room." Me: "gay." Which has been debated since he was alive. Eta: I am always shocked when I hear people eating fish/eels from the Thames River throughout the UK(even today) Even if you don't know bacteria is bad, you think by the smell of human urine and feces, they would have realized eating fish from that water they were draining human/animal sewage into- was bad for you. Maybe that's why the king had his own ponds of fish.

I already spoke about the hand situation on Janet Finer's comment. But, why wouldn't they publish this in cookbook formation is beyond me! Here in America, we even published a Williamsburg (first capital) cookbook. Many of the recipes come from England. This would make a great deal of money for the British! I know I would buy it.

If they are looking at the original written manuscript of the cookbook, why are they not wearing the white gloves that librarians and historians wear to protect historic documents and photos??

Over the past few years there has been an opinion that gloves might actually contribute to damage, for example by making tearing more likely. Either that or it's a reproduction or something.

No replica. But, I do think wearing gloves are better. The dirt (even if your hands are washed) and oily skin cells, can leave more damage. I worked at the "National Archives," in Washington D.C. , and definitely know this!

It’s been recently discovered that wearing gloves leads to tears. The safest way to handle old texts now is with very clean very dry hands

When You look very closely in the left side of the screen, You can see a sharp change in color of the "document". This is most likely a copy of the original as to allow repeated opening, rolling and closing.

Needing to have gloves on to handle paper artifacts is outdated. Doesn’t do much. Clean hands and knowing how to handle are all that’s necessary.
