The mushrooms and Demi-glace are essential to making this a lot more than a breaded pork cutlet. Also, wild boar has a lot more taste than industrially farmed pork. As long as the meat is crisp (outside), tender, and juicy, it doesn’t seem to matter whether it’s wild or farmed. It’s also commonly offered with turkey.

yes, it's a pork schnitzel with mushroom gravy. I have also made this using chicken breast and turkey breast served with Pommes Frites (french fries), the mushroom gravy is what elevates this dish to the next level.

Kein Oregano oder Rosmarin in fie sauce. Never. Schnitzel platieren mur in der Folie. Kein paniert es Schnitzel. Keine Spätzle sondern Pommes.
