My budget tip - I keep a big bottle of lemon juice concentrate in my fridge for when a recipe calls for fresh squeezed lemons. It’s not quite as good no but it does the trick and a big bottle lasts forever. I reserve buying fresh lemons for something special like to go with fried fish. Plus lemon juice concentrate is a great thing to have on hand for adjusting the seasoning of a dish. Sometimes when a dish is missing something, I’ll add a splash of it and voila! Instantly better!

I always appreciate the desserts thrown in! i have teenagers who love dessert and is honestly does stretch the meals, control snacks late at night bc they’ll Klee more full and have already had a “treat” and makes them happy. I buy the 1$ cake/brownie mix and frosting all the time and it’ll last 3-4 days and everyone who wants can have a slice after dinner and there are so many varieties/variations. I can handle 5$ extra a week to have some dessert on hand most nights

Another very simple inexpensive salad that everyone goes nuts for is a cucumber onion salad. 2 cucumbers ,half of an onion, cider vinegar ,sugar salt pepper and maybe a little bit of celery seed if you have it. Every time I bring this to a party it’s demolished. Cut the cucumbers thin.

If you added some kalamata olives, some red onion, oregano and feta cheese to the tomatoes and cucumber and used olive oil and red wine vinegar or balsamic vinegar u would have traditional Greek salad. Great recipes!

You are right! No lettuce in traditional Greek salad! I asked for lettuce in Greece in June and they said it wasn’t in “season.” 😀

I have a Greek Son inlaw and many Greek friends so yes absolutely right no romaine lettuce in traditional Greek salad and actually u should use goat cheese instead of feta if u want to keep it truly authentic.

I can’t imagine the amount of time, thought, and planning that goes into these videos, and how you continue to come up with these meal plans using the same ingredients across multiple meals, but I’m glad to be a recipient! I like your strawberry cake recipe! If you have leftover strawberries and some muscavado sugar laying around, try strawberry milk. I slice up the strawberries in pieces, mix the muscavado sugar with it, and let it sit in the fridge. Then, just add half strawberry and the rest with milk.

My family does enjoy dumplings so 2 options to try. I use crockpot at least 2 times a week. Our schedule gets crazy at times and the crockpot has my back! Strawberry poke cake love making that! Love your videos,and your efforts at keeping it real!👍

There are only 3 ways to open those stubborn little paper packets: (1) ineffectually, as Mindy did here, (2) explosively, as in "I am really glad my counter is clean, but I may have inhaled some of it," and (3) cheating, as in grabbing the scissors. Cheating is best.

Suggestion - if you're removing the onion in the green chile chicken soup because someone in the family doesn't like chunks of onions - consider blending the onion with some broth and then putting it back into the soup to thicken it. Don't waste that onion! LOL I would just chop the onion and eat it in the soup.

I'm all for dessert, but if you are in a tough time and need to cook, you might have to lose it. I would probably ditch the dessert, buy spices, and know that I have them to spice up many future weeks. That being said, LOVE that cake!!! Hey mindy..instead of using the sour cream in your corn bread.. try using an extra egg.. it makes the corn bread more moist...please try it... I always make my corn bread with the extra egg...it turns out like a cake texture..and it isn't dry and crumbly like it mostly does ...even in a scratch corn bread recipe...use 2 eggs and the 1/3 cup of milk...it does improve the corn breads texture

So i got meal kits when they were $1.39-$1.50 a serving and i just froze the meats, produce, and added spices to my cabinet. $50 for 6 meals for 4 people. I just cancel then renew when price drops

It certainly wouldn't be a SeeMindyMom viceo if you weren't talking to us while holding a cup! :D You can add it to the list of your little trademarks. :P I love the chicken and rice recipe. I do a very similar things but instead of rice I put potatoes cut into bite sized pieces. I mostly season with thyme (i personally like it a lot) and then before covering it for the potatoes to cook I also add heavy cream. It gives the potatoes a fuller, creamy flavor. :D And many thanks for the cake recipe, I am so bad with cakes and looking for something easy to start with, so I appreciate your recipe a lot! Thank you!

I'm not a big believer in sugar loading my kids. However, I completely agree with you about having a dessert they like occasionally. Satisfying the sugar craving at home is a lot cheaper than going out for ice cream when we're driving past.

Wish that you didn’t have to use so many products that created so much waste. In other words maybe you could recycle more and get things in bulk. Also do you compost if not you should start. Don’t throw away produce or jarred nut butters in trash. Ugh
