The sauce you made before you added the cheese is the same white sauce my mom would add to new potatoes or english peas and just use salt and pepper. You are making me remember how my mom would budget her meals to feed 6 with only one income before dad got his ssi at 45. She made too much for food stamps but not enough to pay all the extra doctor bills and buy food and household bills. Some how by God's grace and moms saving ways we kept the house and stayed fed. Those were lean times.

To make a gravy or cream sauce without oil or butter. In a dry pan, put the flour and toast it over a low heat and until it begins to change color stir constantly. This will add a slight nuttiness to the flour, the darker the color the stronger the nutty flavor. When the flower has reached a very light brown add the liquids and cook as you normally would for a sauce. I’ve done this many times and it works very well especially if you’re adding a broth like chicken, beef, or turkey that is left over from something you’ve cooked and it has its own grease on the top. I have also made several gravies out of just flour and water when nothing else was available, with salt and pepper it turns out really good.

Biscuits and gravy are such a strange breakfast combo for us Canadians. My neighbors in the upper Peninsula of Michigan would order it at the truck stop so that is how I got introduced to it. Now creamed peas on toast, that was something we would have for lunch in our household. A can of peas half drained, a couple of cups of milk, a dash of butter salt and pepper and thickened with some cornstarch. It was a great way to use up stale bread as well.

I know what you mean about dragging out the food processor for something small like breadcrumbs. I learned from someone else to Save The Empty cereal bags and when I need to crush something like nuts or breadcrumbs or really anything that you're going to bread with I just throw it in there and then use your rolling pin or even a can or even just step on it a few times! The cereal bag was going to be garbage anyway so now you've got another use out of it and then it can go into the trash!
