I just watched this episode and I’m all lost : did banks use words for credit card code in the 90´s ? Or it is just a word to remember the numeric code ? A 5 digit numeric code ? If so, why can’t George just give the numeric code ? Please explain !

Look at your phone. 2 = ABC 3 = DEF and so on. So instead of remembering five random digits, you make a word with them. BOSCO becomes 2-6-7-2-6. The word is a mnemonic device. If George says either BOSCO or 26726 you know his code (which is 26726).
