Your wife is right, the boys should be giving you a hand, they learn very quickly if you dock pocket money for any carelessly selected limes. Activity is activity not just on the football field. My kids were not very sporty but always won out on the endurance tests as I involved them in garden help and food preparation. They grew up with skills such as, to the wonderment of their peers, able to cook a roast dinner.

Great savings on cordial (Kool-Aid) Mark, ...cool eh. Your greens looks nice and healthy. The butter lettuce, kale and cabbages are stunning. I was a bit slow to plant my peas, they just started growing. I guess they will welcome spring in a few weeks,, so not a bad thing after all. Clever idea to ferment the artichoke, hope Patrick Doolan will see it. Another great way for his crop. A home dad, awweee, to be admired my friend. Yep, wifey is right, get the kids to collect the lime. Oh btw, it was your orchard that inspired me to start a fruit forest for my backyard. I always look forward to seeing what you have ready to pick in your orchard especially the mangoes. I will definitely get a Tahitian lime.

Mark, your garden is looking so wonderful. Can't wait till for our winter. Right now melons and sunflowers are the stars in our summer garden. This weekend we repaired a leak in the roof ( eek rainy season) and created a new flower bed. We must be insane in this heat but needs must.

Yes your winter is the same as ours which is an AWESOME time of year for growing vegetables. The subtropical summer does give us those wonderful fruits such as mangoes etc but the heat is tough especially when you're working outside! For me... summer is coming... lol

I make lemonade and substitute honey for sugar.I don't know if it would effect the taste of limes. My line trees are young and haven't produced more than 10 limes a piece. They are Persian limes first year in north Florida and growing nicely

Most of the citrus vitamins are in the peel which sadly ends in the compost heap. To sun dry the peels 1st remove all the white flesh. Cut the peel into thin slices and leave to dry in a sunny dry spot covered with fine netting for a week or two. The process can ge spead up over night in an oven on its lowest setting

Hi Mark, Another awesome video, thank you :). Just wanted to let you know there are many other great uses for those skins, as worms are not really a fan of Citrus peels. 1. Use to attract and trap Slatters in your vegie patches, which you then get rid off. 2. Dry them out over summer and use them as fire lighters during winter. I love this one :). 3. Slice them up place into a glass bottle or jar, cover with honey and let ferment for a few weeks, burping once or twice a day. Once ready drain off liquid. The glaced skins can then either be eatern as is, or stored in jars for cooking - cut up finally and add to biscuits/cakes/muffins etc... The liquid is then used in cooking, but I mainly use it to sweeten my teas :). Keep up the great work :).

I let it ferment, called cheong. Usually I use fruit with peeled on, cut up and equal amounts of sugar by weight. Put into jars and Let ferment about a week to 10 days (let gas escape without letting air in like you would for salt fermented veggies. Pour off liquid. At that time you can candy the peels by rolling in sugar and then dehydrating.

I've had persian limes and keylimes here in lousiana, but then lost them in a hard freeze. If i can ever get a green house of sorts then i will grow some more. Great clip.

I would say that you can store the Cordial warm without fermentation because there is too much sugar for the yeasts to survive. This is why fermented sweet drinks get back sweetened, which means add sugar later. You need the right amount of sugar to get fermentation going, not too much. Anyone adding this amount of sugar for 1.5 liters does not need to worry about fermentation, so boiling to kill everything is unnecessary.

Have you thought of making citrus jams out of the peels? in the US they use orange peels for just that purpose and besides on toast with butter it goes really well with the turkey in the cranberry sauce for Thanksgiving dinner. All you do is cook equal parts cranberry jelly comes in a can hopefully whole cranberries in it with same quantity orange jam and throw in some orange liquer . When it has cooked down let it cool and serve with a little orange liquer on it and set on fire! Great show wonderful flavor.

Is there some kind of fish you could stock your pond with that cleans the pond? As you can tell I know nothing about ponds, just wondering? Those limes are huge! Have you tried growing Key Limes? They are sweet and wonderful.

How long can this uncooked lime cordial be stored in the cupboard without refrigeration? When is it required to be stored in refrigerator at all at any time?

in the US we do use liters for measurement, but we also use imperial, it is weird i know. If you buy milk it comes in 1/2 or 1 gallon volume, but if you buy cola it comes in liters.

hi father mike its a nice video . i have a tree of lemon in my house but i dont use it like you i ferment the lemon with the sea salt in his water because the water of lemon get out by the salt and after year of fermentaion the color of lemon will be change to the honey color with strong smell and taste you can use it with meat and many other recipies good bay love you

nice video/vlog I might have to give the lime cordial a try this summer as i generally drink a bottle or so a week during the hot months up here while working on site. I drink lots of water around 8 to 10 liters but cant handle much more then that so i mix it with the old cotties coola or raspberry

Yeah I find the same thing when I'm working hard in the yard especially in summer the water starts to become a little bland and to encourage myself to keep the liquids up I tend to flavour the water lightly with a little homemade cordial - that tastes much better IMHO. Cheers mate :)

Admitting I am a bit naive on the subject of "cordial" I know it as an adult beverage. This looks (and sounds) like something you would add to carbonated water to make your own lime soda? Or add to water to make limeade? Am I correct? I have many citrus trees and this looks like a great way to use the juice. Especially I have a tree my late friend called Calamonce. It is a very sour, almost bitter, orange citrus. This could be a way to use it! Otherwise I just give it away to people in the community that want it.

Yes that's correct, we use our citrus syrups along with our SodaStream to make our own soft drinks. It's still not good to drink too much of it but it's better and less sugar than regular supermarket soda. Cheers :)

Instead of using sugar, try using Sukrin sugar a natural product but with out the calories.

Love the channel, but didnt love the comment about kids. You were right initially, get them trained. My brother never involved his kids in anything as they were growing up and i watched my 23 year old nephew jump and drop a drill when the sound scared him just this past weekend. He had to help replace a shower head a few weeks ago. Im a 'if ya want it done right...' person too, but you owe it to your kids to get them involved. Teach them. Show them a little hard work doesnt hurt.

Terri­Beth Reed yeah I do. I sauté them. Or something’s add to my homemade dog food just for some vitamins. I use food processor to grind up dog food though.

Hi Mark , my husband and I live near Mackay at the moment (waiting for our house to sell so we can move back to the Sunshine Coast ) anyway we don't use any pesticides on our fruit trees or vegetables but we still have problems with slugs and worms that totally destroy our spinach and broccoli and other things , we use Eco sprays and home made sprays , what do you use to keep away bugs ? Hi Kerry, good luck with your move back to SC! There are organic sprays and powders but I don't use anything on my vegetables (especially against slugs or caterpillars as I find them easy to control organically). This may sound a little oversimplified or even far stretched but the most important things I do when growing vegetables is to grow them at the right time of year for my climate/micro climate - this can take a few seasons to work out, also I ensure the plants have good soil, regular water, and enough food/nutrients to keep them strong because weak or stressed plants get targeted by pests. Other strategies I use are: I usually grow more than I need and by doing so I can sacrifice some plants whilst harvesting the ones that make it; keeping a close eye on plants and removing pests by hand when I see them; encouraging small birds and predator insects into the garden by leaving some vegetables go to flower and by growing other flowering plants on my property. I sometimes use exclusion (netting) this is very effective when growing out of season or when the pest is just too difficult to control such as fruit fly. Hope this helps :)

on the juicer, I feel like running that lime juice through a coffee filter wouldn't hurt anything. Recon it's worth it?

Nah, I wouldn't go through the trouble of filtering it because the slight extra bit of fibre in the raw juice is much better plus it makes the cordial bulk up more. :)

I think it's more fun to make small segments, but not chop up the video, like the shadow bit, that was fine, really, I wouldn't have thought to edit it out. if anything I'd have made shadow puppets and been silly.

oh definitely. being silly in a tasteful way, can be great. some of my favorite youtubers develop mannarisms, and almost "rituals" stylizing certain things like the BRB sort of cuts where you know you're going to cut away the boring bits. or even just funny names for things. for you, being australian, I know that aussies have a wonderful array of colloquialisms for various things, use them! If you ever watched the movie "good morning Vietnam" with Robin Williams, you'll know what I mean. have fun!
