@@CookingwithShereen Mrs. Shereen, Cincinnati cheese coney prep, once again , i am not a food nazi, lol, this is how the parlors all prep it. The coneys here are smaller than a regular hot dog, the bun & hot dog are appx. 4 inches long, max, you probably won't find them there, but is ok. You want a 50/50 ratio of beef to pork or use your fave. They are thin, so i would say oscar mayer bun length hot dogs would work. Heat your chili in pan with covered lid to simmer, you can boil in water or heat your dogs in microwave( just til their hot & do not split), the dogs are never grilled or browned. Use the same feather shredded mild cheddar cheese as on the chili spaghetti, small diced onions if you want them, & plain yellow mustard like French's brand, etc.... thenregular hot dog buns. When everything is prepped & chili & dogs are heated, but the buns do at last. Use wet paper towels or a wet tea towel to cover the buns & nuke for appx. 30 seconds in microwave. Squeeze a strip of the mustard thru the bottom crease of the buns, lay in the hot dog, then onions if you want, 1 ladel of chili then the feather shredded cheese. You really want the cheese long & thin like the pasta chili( see videos i sent if you forgot or i can send again) , then if you like, add tobasco hot sauce on the chili. Oyster crackers eaten on the side. Delicious. Once again, i am not a food nazi, lol, it is just how they all do it. God Bless you all, & i hope you try it, i like the pasta dish more than the coneys, & right now i'm heading out to eat some, talked myself into it, lol

I’ve been making homemade pasta for about 7 years. when I was broke and living in a tiny apartment, I made it all my hand! Now that I have a busy life with kiddos, I do the exact process she described above. When it boils down to to a routine, it really is an hour, start to finish!! Make it weekly and you’ll find homemade pasta is incredibly filling and everyone sleeps hard that night!!!

I was just gifted my new Kitchenaid stand mixer, and haven't got the pasta roller or pasta maker attachments yet. I just can't wait to try fresh pasta at home. I used to be a chef in an Italian restaurant, we had fresh pasta made daily... it was amazing. Thanks for this video Shereen!

My mom has a pasta maker from the 70's. It clips to the side of the counter!!😲 I grew up making pasta with that! My mom passed down the pasta making tradition to my teenage daughter as well! 🥰 Its such an AMAZING thing to be able to share for 3 generations!!!! 🥰🥰🥰 Thanks for teaching all of us your traditions.

I have recently started a big interest into home cooking. I feel like once I purchase the kitchen aid attachment for pasta I could do this. I like semolina because it adds good nutritional value vs AP flour alone.

Hey Jeremy! Welcome! You don't need the attachment, but it makes it so much easier. Can whip this up any night of the week. Dough will keep tightly covered in frig, up to 3 days.

Pasta made with eggs can be dried or not. Pasta made with water only must be died, or it will get gooey in the boiling water. Great video! Keep the Italiana-Americana traditions alive. Brava!

I always dreaded making pasta because I thought I had to dry it. Who knew I can just roll it in flour so it doesn't stick together and no need to dry it. Thanks for the tips! You're so much fun to watch!

Oddly enough Pasta/Egg Noodles (Chinese) were a way to use Eggs before they went bad. Pretty interesting that Pasta/Egg Noodles can last for years, but eggs can't. Fresh Pasta/Noodles should dry for maybe an hour, because the cooking time is only about a minute or so with fresh made and it falls apart really fast when over cooked, but it's always fun to make your own Pasta. I HIGHLY recommend making RAVIOLI if you're going to make Pasta, you can toss leftovers into a food processor and mince them up and stuff that into Ravioli..be creative.

Hi! I tried some other pasta recipes when I got my first set of pasta attachments for Christmas (the ones that make fusilli, macaroni, etc). Your recipe is, by far, the best and yet, the easiest to make. The food processor is a game changer! Anyway, I just got the fettuccini and spaghetti attachments over the weekend and it came out perfect on my first try. Thanks!

Hi shereen. My wife got me an early Christmas present. The kitchen laid pasta roller set. Never made home made pasta before but was looking for a recipe to try. I came across this one and we are going to try it for the first time in the near future. Looking forward to make it and to find if we are going to stick with for all our paste making recipes. We also getting a kitchenaid pasta press with different cutter for macaroni and others.

Love all your videos! Any recommendation on how to store the pasta beyond day three? Could it be frozen or should it just be tossed after day 3? Only cooking for one, maybe two :)

Thank you so much Lauren! Yes, you can freeze it. I usually flash freeze it (line a baking sheet with parchment, form little bundles, spread out) and place into the freezer. Once frozen, remove the bundles to a large zipper bag. Will keep up to 2 months. Careful not to stack on top of the bag or the pasta will break. You can pull out a couple bundles, as needed. No need to thaw. Toss into boiling salted water for about 3 minutes.
