When they say "upper class do they mean the Brahmin? If so, why would the Brahmins serve in the military if it wasn't their tradition?

I can't say I know for sure. I am sad to say I don't know all that much about Indian history, so I would have to research that a little more.

"Upper caste" does not only mean brahmins. It depends on the context. Usually it means Brahmins, Kshatriyas and Vaishyas while Shudras were the lowest caste and Dalits were lower than all 4 castes. In this particular instance, it meant mostly Brahmins and Kshatriyas (from the Awadh region as well as landlords from the Bengal presidency).
